Easy Dinner Idea: Steak and Egg Salad

Start by marinating your strip steak in a glass dish with Worcestershire sauce. I keep in fridge until I’m ready to cook (taking out of fridge about a 1/2 hour before ready to cook).

I use the egg cooker to hard boil my eggs first. (When they are done, I place them in an ice bath for 10 minutes before peeling.).

While eggs are cooking pre-heat the oven to 400 degrees.

Next place 1-2 tablespoons of oil (usually grape seed oil - though I used olive oil in the video) Turn heat onto medium heat then sear the steak on each side ( I do 2 minutes per side, then 1 minute per side.) before placing in oven to finish cooking for about 8 minutes. Then let steak rest on cutting board for 10 minutes before slicing.

While the steak is in the oven and then resting, chop your veggies, and wash and chop your lettuce ( I like iceberg for this salad but used romaine here because that’s what I had)

Assemble your salad with the lettuce, veggies, chopped hard boiled eggs and sliced steak. I like to add salt + pepper and some homemade ranch dressing (I mix a ranch packet according to directions but sub yogurt for mayo)

I also sometimes serve the kids steak and eggs separately without the salad and give them cut up bell peppers and cucumber or tomato for their vegetable.

Workout at Home Favorites

I do a lot of my workouts at home as a busy mom in her mid-40’s. Lifting heavier weights has become really important to me as I age so I’ve been adding in heavier weights some days, and using lighter ones on others.

I’m always more motivated to workout in cute workout clothes and Amazon workout clothes are now my go-to! They are inexpensive and I love buying solid color tops, leggings and sports bras so I can mix and match them.

Sports bra is true to size and one of the nicer more sturdier made ones - wearing size small and I also have in black. This sports bras looks cute with sweatshirts with open backs or boat neck tops where you see the straps.

Love these leggings - so soft and comfy - wearing true to size workout leggings in size XS. I have these in several other colors.

Sticky socks come in a three pack of socks and I wear them for many of my workouts both with and without sneakers.

Hair Care Favorites

Shampoo: I currently use Kevin Murphy shampoo in Everlasting Colour Wash

Conditioner: I currently use Kevin Murphy conditioner in Everlasting Colour Rinse

Purple Shampoo: I use the Fanola shampoo about once every two weeks for my blonde hair

6-in-1 Styler: I use this product on towel dried damp hair before combing through my wet hair and to also use for a heat protectant.

Hair clips: These alligator clips from Amazon hold my hair in place when I section it to dry or curl it. They come in a pack - I even use them to keep my hair back when cleaning around the house - to keep my hair out of my face without putting crimps in my hair.

Dyson Airwrap: I’ve had this airwrap complete kit for almost 3 years and have LOVED it! I got it as a Christmas gift - and use it on my hair weekly. The updated version has an updated version of the hair dryer attachment and it also comes with longer barrels than my older version. This would definitely be a splurge-worthy gift for her!

Curling iron: I’ve had this curling iron for over a decade and it’s still going strong. I use the curling barrels on the Dyson when I want the hair curled all the way down the section - but I use this curling iron when I want the bottoms of the pieces to remain straight.

Dry Shampoo: I use this Living Proof Dry Shampoo to extend my hairstyles in between washing.

Texturizing Spray: I love this product so much! I use it almost daily - it definitely adds volume and texture to my hair and is one of my favorite hair products - I’ve used for years!

Roasted Sweet Potatoes in the Oven using the Veggie Chopper

I used my veggie chopper to save time in chopping my sweet potatoes. It’s much quicker and I also get sweet potato chunks the same size which makes them roast more evenly too.

There are different inserts which will give you larger or smaller chunks depending on which size you use. I am using the larger sized chunks one for the potatoes and onions - I usually use the smaller insert when I want tiny diced onions and celery for chicken salad or egg salads.

This chopper is easy to clean, makes chopping and dicing faster and I now keep it out on my counter because I use it weekly!

Here’s how I roast my sweet potatoes:

* Preheat the oven to 425 degrees. Chop several sweet potatoes and one onion and divide them evenly onto 2 parchment lined cookie sheets.

* lightly coat with grapeseed or olive oil and salt (or salt and pepper) and toss to coat.

* Roast for 30-40 minutes tossing every 10-15 minutes until browned, carmelized and to your liking.

This makes a great side dish especially during the Fall and Thanksgiving season!

3 Thanksgiving desserts

Thanksgiving Fruit Salad

Ingredients:

mixed berries (2 cups) (like strawberries, blueberries, raspberries)
2 ripe pears, diced
2 apples, diced
pomegranate seeds (1 cup)
1 Tablespoon honey (adjust to taste)
1 Tablespoon fresh lemon juice
Chopped nuts (such as pecans or walnuts) for topping (optional)

Directions:

In a large bowl, combine the mixed berries, diced pears, diced apples, and pomegranate seeds.
Next, in a small bowl, whisk together the honey and fresh lemon juice to create a simple dressing.
Drizzle the honey-lemon dressing over the fruit mixture and gently toss to coat the fruits evenly.
Taste the fruit salad and adjust the sweetness with more honey if desired.
If using, sprinkle chopped nuts on top of the fruit salad for added crunch and flavor.
Serve the Thanksgiving fruit salad immediately or refrigerate a short while to allow the flavors to meld.

Turkey Cupcakes:

Take that leftover Halloween candy corn and use it to create turkey cupcakes! Grab some store bought cupcakes (I used mini pumpkin spice ones) and some candy eyes.

Place several pieces of candy corn narrow side down into the icing at the back of the cupcake. This creates the turkey feathers.

Next, place candy eyes on the icing and then break the tip off of a piece of candy corn and place just below the eyes for the turkey beak.

Acorn Bites

Ingredients:

Mini Nilla wafers
Hershey’s kisses
Mini chocolate chips
Nutella (you can also use chocolate frosting instead)

Directions:

Start by applying Nutella (or chocolate frosting) to the bottom of a Hershey Kiss.
Attach a mini Nilla wafer to the Hershey kiss using Nutella or frosting as your ‘glue.’
Carefully dip the bottom of a mini chocolate chip in Nutella and place on top of the mini Nilla wafer to make the top of the acorn
