Roasted Sweet Potatoes in the Oven using the Veggie Chopper I used my veggie chopper to save time in chopping my sweet potatoes. It’s much quicker and I also get sweet potato chunks the same size which makes them roast more evenly too. There are different inserts which will give you larger or smaller chunks depending on which size you use. I am using the larger sized chunks one for the potatoes and onions - I usually use the smaller insert when I want tiny diced onions and celery for chicken salad or egg salads. This chopper is easy to clean, makes chopping and dicing faster and I now keep it out on my counter because I use it weekly! Here’s how I roast my sweet potatoes: * Preheat the oven to 425 degrees. Chop several sweet potatoes and one onion and divide them evenly onto 2 parchment lined cookie sheets. * lightly coat with grapeseed or olive oil and salt (or salt and pepper) and toss to coat. * Roast for 30-40 minutes tossing every 10-15 minutes until browned, carmelized and to your liking.
