Burrata stuffed croissant
Ingredients
✨croissant bread lightly toasted
✨burrata
✨prosciutto
✨tomato confit
✨sun dried tomato pesto
✨balsamic glaze
✨salt and pepper

Instructions:
Make your tomato confit, then lightly toast your croissant while that’s toasting make your tomato sun-dried tomato pesto. Spread the pesto on both sides of your croissant then top with prosciutto burrata and your tomato confit. Drizzle with balsamic glaze and enjoy!

Tomato confit
✨15 grape tomatoes
✨2 garlic cloves cut in half
✨evoo
✨balsamic vinegar
✨salt & pepper
Instructions:
Add your tomatoes and garlic to an oven safe dish, then swason with salt, pepper, and balsamic glaze, and then submerge in enough olive oil to cover the tomatoes. Cover and cooking in the air fryer at 450°F for 15 minutes.

Sunday dried tomato pesto
✨ sundried tomatoes
✨ garlic confit(from the tomato made above)
✨Parmesan cheese
✨ Calabrian, chili peppers
✨olive oil from the tomato confit
✨salt and pepper

Combine all ingredients in a blender or food processor. Wait to add the salt at the very end so it doesn’t come out too salty.

This is how I make my Fresas or strawberries and cream. It is so delicious and I love that you can adjust the sweetness to your liking by making it at home! This is the perfect treat to make for Mother’s Day!

Fresas con crema
✨1 cup sour cream
✨1/4 cup evaporated milk*
✨1 can of condensed milk
✨1 teaspoon vanilla extract
✨1 lb fresh strawberries

You can keep this in the fridge premixed and it’s good for up to three days! Or you can store the cream separate and just serve it as you go.

The best Banana pudding
✨1 box(3.4 oz) of French vanilla pudding
✨1 box(3.4oz) of banana cream pudding
✨2 cups of milk
✨1 (8oz) block of cream cheese
✨1 (14oz) can condensed milk
✨2 cups of homemade whipped cream
✨4 boxes of walker cookies
✨6 bananas sliced
✨brown sugar for garnish (optional)

Homemade whipped cream
✨2 cups of heavy whipping cream
✨1/2 cup of powdered sugar
✨1 teaspoon vanilla extract

1.In a bowl, blend milk and pudding mix with an electric mixer. Refrigerate.

2.In another bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

3. In a third bowl, Mix cream cheese and condensed milk until smooth.

4. Fold in half of the whipped cream into the cream cheese mixture

5.Combine cream cheese mixture with pudding mixture until blended.

6.Layer bottom of baking dish with pudding, cookies, and bananas.

7.Pour mixture over cookies, add another layer of bananas, and cover with remaining banana. Cover with remaining banana Pudding and whipped cream.

8.Garnish with crumbled cookies and bananas, sprinkle with sugar, and optionally brulé the bananas.

9.Refrigerate for at least 30 minutes before serving.

In the video I only made half of the recipe above, so if you’re making the full recipe then you will need a 13x9x2 baking dish.

I love corn in a cup, and this is a pasta version of that which is perfect for any upcoming bbq or cookouts! I personally love this salad warm, but you could also serve it cold. It just depends on your preference!

✨ 1lb of pasta
✨2 T chicken boullion to salt pasta water
✨1lb bag of corn (2 cups)
✨4 oz cream cheese (room temperature)
✨4 Tablespoons of butter
✨2 teaspoons paprika
✨3 teaspoons chilli powder
✨1 cup mayo
✨3/4 cup sour cream
✨juice of 4 limes
✨1/4 cup grated Parmesan cheese
✨salt and pepper to taste
✨cilantro for garnish
✨cotija or queso fresco

1. Bring water to a boil, add chicken bouillon, cook pasta al dente.
2. In a pan, melt butter, add corn (frozen or grilled), and cream cheese, once cream cheese is fully melted turn off stove.
3. Add chili powder, paprika, garlic zest, mayo, sour cream, and Parmesan.
4. Combine cooked pasta and corn mixture, add lime juice, salt and pepper and mix well.
5. Taste for salt and Garnish with cotija cheese and cilantro. Enjoy!l

I used to love hamburger helper when I was younger, it is such a comfort meal and this is basically a grown-up elevated version of that!

Beef Stroganoff Recipe
✨1 lb of ground beef
✨1 small yellow onion
✨1 Tablespoon butter
✨6 cloves of garlic minced
✨1 block of cream cheese
✨2 cups of pasta
✨2 cups of chicken or beef broth(I used chicken bone broth)
✨1 teaspoon garlic powder
✨1 teaspoon onion powder
✨1 teaspoon Italian herbs
✨ salt and pepper to taste
✨1/4 cup cheddar
✨1/4 cup mozzarella

1. Brown meat on medium heat, seasoning with garlic powder, Italian herbs, salt, and pepper.
2. Add butter (optional for fattier ground beef), minced yellow onion, and minced garlic; sauté until onions are translucent.
3. Deglaze the pan with chicken broth.
4. Add pasta sauce and cream cheese block.
5. Bring to a boil, then add pasta.
6. Reduce heat to medium-low, cover, and cook for 15 minutes or until pasta is soft.
7. Taste for salt, then turn off heat.
8. Top with cheddar and mozzarella cheese, cover to melt.
9. Serve and enjoy!

Mojitos remind me of the spring time and here is a Mocktail version! You can swap out the orange for strawberries, and it’s also so delicious!

Brown Sugar Orange Mojito Mocktail
✨10 fresh mint leaves
✨3 Tablespoons orange juice
✨1 small lime cut into quarters
✨1 Tablespoon brown sugar (or more if you like it sweeter)
✨soda water (I used a lime flavored soda water)

Garnish
✨mint leaves
✨orange slice
✨sugar for the rim

1. Rim the glass with lime and dip it in brown sugar.
2. Add lime pieces, orange juice, mint, and sugar to the glass, then muddle.
3. Taste the syrup; if desired, add more sugar for sweetness.
4. Top with ice and soda water.
5. Garnish with a slice of orange and additional mint.
6. Enjoy!
