Southern Biscuits & Gravy
✨ 1 lb maple breakfast sausage
✨1/4 teaspoon cayenne
✨1/4 teaspoon garlic salt
✨1 teaspoon Worcestershire sauce
✨2 tablespoons butter
✨ 1/4 cup all-purpose flour
✨3 cups milk
✨ Lots of freshly cracked black pepper
✨fresh sage
✨ 1 can refrigerated biscuits plus melted butter mixed with honey to top them off when they’re done

Brown the sausage over medium heat and season with cayenne, garlic salt and Worcestershire sauce. Add butter and sage then Sprinkle in the flour and cook for about 3 minute, stirring well. Slowly pour in the milk and simmer until the gravy thickens. Taste Season with salt and plenty of black pepper. Arrange the biscuits over the gravy, remove the cookware handle, and bake at 350°F for 20 to 25 minutes until golden brown or according to the biscuit package

Mini Bagel Breakfast Sandwiches
Makes 8: refrigerate for up to 4 days, or freeze for up to 2 months.

Breakfast Sausage
✨ 1 lbs ground pork
✨ 2 oz pancetta, finely chopped
✨ ¼ tsp dried rosemary
✨ ½ tsp dried thyme
✨ 1 ½ tsp kosher salt
✨ 1 tsp ground black pepper
✨ ½ tsp fennel seeds, lightly crushed
✨ 1 tsp brown sugar
✨ ½ tsp grated nutmeg
✨ ¼ tsp ground sage
✨ ½ tsp chipotle powder
✨ ¼ tsp crushed red pepper
✨ ⅛ tsp ground cloves

Baked Eggs
✨ 6 large eggs
✨ ¼ cup half-and-half
✨ ⅛ tsp kosher salt

For the Sandwiches

✨ 8 mini bagels

Sausage, Egg & Cheese
✨ Butter
✨ 4 slices American cheese, halved
✨ Baked eggs
✨ Sausage patties

Cream Cheese & Candied Jalapeño
✨ Cream cheese
✨ Candied jalapeños
✨ Sausage patties

Instructions

1. Make the sausage: Combine all sausage ingredients and form into 8 patties, slightly larger than the bagels. Cook over medium heat for 3–4 minutes per side, or until cooked through.

2. Bake the eggs: Whisk eggs, half-and-half and salt. Pour into 8 greased muffin cups and bake at 350°F for 12–15 minutes, until just set.

3. Assemble:
For the classic sandwiches, add butter, American cheese, sausage and egg to each mini bagel.

For the second version, spread the bagels with cream cheese and add sausage and candied jalapeños.

Store & Reheat
wrap individually.
