Twenty minutes and my whole week runs smoother. And by my I mean ours, but less stress for the family means less stress for me 🙃

I’m officially calling these Dump Egg Cups because I quite literally dumped in everything that needed to be used from my refrigerator… and somehow created one of the best breakfasts I’ve made. 😂

Roasted potatoes, zucchini, squash, cottage cheese, cheddar, and eggs—all baked together into fluffy little cups that are packed with protein, vegetables, and flavor.

The best part? There’s no exact recipe required (but because I love you, recipe below 😘). Honestly, use whatever vegetables, meat, cheese, or leftovers you already have. It’s less food waste, an easy breakfast for busy mornings, and they’re freezer-friendly- I’m officially calling these Dump Egg Cups because I quite literally dumped in everything that needed to be used from my refrigerator… and somehow created one of the best breakfasts I’ve made. 😂

Dump Egg Cups
18 eggs
1 cup cottage cheese
1 onion diced
2 zucchini diced
3 roasted tomatoes diced
1 cup diced ham
1 cup cheese

Bake at 400 for 20 minutes
