Deconstructed Spicy Salmon Sushi Rolls (aka Spicy Salmon Rice Bowls) Serves 2 Ingredients: 8 oz salmon (seasoned with salt & pepper) 1 cup cooked rice 1 avocado, sliced ⅓ cucumber, thinly sliced ¼ cup scallions, chopped 1 bunch cilantro, roughly chopped 2 tbsp sesame seeds Soy glaze: ¼ cup soy sauce 2 tbsp honey 1 tsp chili flakes 1 tbsp sesame oil 1 tbsp rice wine vinegar Spicy mayo: ½ cup mayo ¼ cup sriracha (adjust to taste) Instructions: Cook the salmon in a skillet over medium heat until crispy and cooked through. Set aside. In a small saucepan, combine soy sauce, honey, chili flakes, sesame oil, and vinegar. Simmer until slightly thickened. Drizzle glaze over the cooked salmon. Assemble your bowls: rice on the bottom, then layer with salmon, avocado, cucumber, scallions, cilantro, and sesame seeds. Top with spicy mayo and an extra drizzle of soy glaze if desired.
