here's how I made these Dubai Chocolate COOKIES >>>

	DUBAI CHOCOLATE “CRUMBL” COOKIES
Cookies:
🩷 1 cup butter cold and cubed (2 sticks)
🩷 1 1/4 cup brown sugar
🩷 1/2 cup sugar
🩷 2 eggs 
🩷 1/2 tbsp vanilla
🩷 3 cups flour
🩷 3 tbsp cornstarch
🩷 1 cup cocoa powder
🩷 1 tsp baking soda   
🩷 1 tsp baking powder
🩷 1 tsp sea salt

BEFORE PUTTING IN OVEN, PLACE FILLING INSIDE AND SHAPE DOUGH AROUND IT

Bake at 350*F for about 8-10 minutes

DUBAI CHOCOLATE FILLING - MATCHA 💚: 
MATCHA GANACHE:
100 grams white chocolate (chopped into small pieces, i used chips!!)
30 grams heavy cream
1 teaspoon matcha powder (i wanted it STRONG, so i used 1 tablespoon)

Place the white chocolate into a microwave safe bowl, and pour the cream over the top.
Put the bowl in the microwave and heat for 20 seconds (at 1000W).
Remove the bowl from the microwave and give the mixture a good stir to help melt the chocolate. As the chocolate melts it should combine with the cream and make a smooth ganache.
If the chocolate has not yet fully melted return the bowl to the microwave and heat for a further 10 seconds, then stir again.
Once the chocolate and cream have combined, stir through the matcha powder.

OR PISTACHIO FILLING:
💚 1 tablespoon tahini
💚 8 ounces raw pistachio butter, creamy
💚 6 ounces kataifi pastry dough, shredded phyllo dough 
💚 2 tablespoons white chocolate chips, or any white chocolate for design, optional

Chop the Kataifi (phyllo dough) over a cutting board.
Place the 2 tablespoons of coconut oil (or butter) in a pan over medium heat. Add the chopped kataifi to the pan. Cook the kataifi for a few minutes while continuously mixing until golden brown.
Turn the heat off and then add the pistachio butter and tahini. Mix everything to combine.
Divide the pistachio filling mixture equally small clumps/little balls
Allow it to set in the fridge for 20 minutes or in the freezer for 10 minutes.
SCOOP UP AND BEFORE PUTTING COOKIES IN OVEN, PLACE FILLING INSIDE AND SHAPE DOUGH AROUND FILLING

PINK SUGAR "CRUMBL" STYLE COOKIES

Cookies:  
🩷 3/4 cup butter (1.5 sticks)
🩷 1 and 1/4 cup white sugar
🩷 1 egg
🩷 2 tsp vanilla extract
🩷 1/4 tsp almond extract
🩷 2 and 1/4 cup flour
🩷 2 tbsp cornstarch
🩷 1/2 tsp baking powder
🩷 1/2 tsp baking soda
🩷 1/4 tsp cream of tartar 
🩷 1/2 tsp salt

Mix together DRY ingredients fully, and then add in WET ingredients

Bake at 350 degrees for 10-12 minutes 
  
Pink Frosting: 
🩷 1 stick butter (1/2 cup)
🩷 2 and 1/4 cups powdered sugar
🩷 1/2 tbsp cream or milk
🩷 1/4 tsp almond extract (OPTIONAL)
🩷 pink or red food coloring (to make pink)

🍪 SNICKERDOODLE COOKIES LIKE CRUMBL 🍪
3/4 cup butter (1.5 sticks)
1 cup white sugar
1 egg
1 tsp vanilla extract
1/4 tsp almond extract
2 cups flour
2 Tbsp cornstarch
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp cream of tartar
1/2 tsp salt
1 tsp cinnamon 

Cinnamon Sugar Dusting:
1/4 cup sugar 
1 1/2 tsp cinnamon

Bake at 350 degrees for about 7-10 minutes

2 cups of white chocolate MELTED to USE AS FROSTING ON COOKIES 
)melt in saucepan on low heat OR in the microwave in 30 sec increments —CAREFUL, it burns easily, so stir to check if it is melted BEFORE ADDING MORE HEAT)

THEN top w cinnamon streusel crunch:
1 cup all-purpose flour (130g)
1/2 cup light brown sugar, packed (100g)
1/3 cup granulated sugar (66g)
1 Tbsp ground cinnamon
1/4 tsp fine salt
6 Tbsp unsalted butter, melted and cooled (85g)

	0.	In a large bowl, whisk together the flour, brown sugar, granulated sugar, ground cinnamon, and salt.
	0.	Pour the melted and cooled butter into the dry ingredients and gently stir together with a fork to make some nice, big crumbles. You should end up with a bowl of what looks like wet sand with some pea-sized chunks. Be careful not to over-mix! (you want to leave some of those buttery chunks intact)

DRIZZLE WITH MELTED WHITE CHOCOLATE TO FINISH

BROWN BUTTER COOKIE DOUGH TOPPED COOKIE 🍪 
Cookies:
🍪 1 cup BROWN butter
🍪 1 ½ cup brown sugar
🍪 2 eggs
🍪 1 tbsp vanilla
🍪 3 cups flour
🍪 3 tbsp cornstarch 
🍪 1 tsp baking powder
🍪 1 tsp baking soda 
🍪 1 tsp salt 
🍪 1 ½ cup milk chocolate chips

Bake at 375*F for about 7-9 minutes 🍪

Frosting:    
🍪 1/2 cup butter
🍪 1 tsp vanilla 
🍪 1¼ cup powdered sugar
🍪 1 tbsp brown sugar
🍪 2 tbsp cold whipping cream
(put in freezer for about 10 minutes, longer if needed)

1/2 cup butter
1 tsp vanilla 
1¼ cup powdered sugar
1 tbsp brown sugar
2 tbsp cold whipping cream

how to brown butter:
!browning butter is pretty quick, so don’t leave the stove unattended. have a heatproof bowl next to the stove ready to go!
1: Place the butter in a light-colored pan over medium heat. (medium heat ensures the butter cooks evenly, an important factor in this process)
2: Stir the butter the entire time to keep it moving. Once melted, the butter will begin to foam and sizzle around the edges. Keep stirring. 
3: In about 5–8 minutes from when you started (depending on the amount of butter you used), the butter will turn golden brown. Some foam will subside and the milk solids at the bottom of the pan will be toasty brown. It will smell intensely buttery and nutty.
4: Immediately remove the pan from heat and pour the butter into heatproof bowl to stop the cooking process. If left in the hot pan, the butter will burn.

Cookie Dough Topping:
🍪 2 tbsp melted BROWN butter
🍪 2 tbsp brown sugar
🍪 1 tbsp sugar
🍪 1/2 tsp vanilla
🍪 1 tbsp mini chocolate chips
🍪 1/2 cup flour
🍪 1-3 tsp whipping cream or milk

(To heat treat flour, put it in the microwave for about 45 seconds, mix and then microwave for another 35 seconds)

TOP WITH MINI CHOCOLATE CHIPS 🍪
