Comment RECIPE below for the recipe for Ma’am’s Spqghetti in your DMs! This family favorite is something I hope to continue to pass down for several generations. My grandmother, affectionately known as Ma’am to me, wasn’t Italian, but she loved to make spaghetti for her family and friends. Her spaghetti dinners were famous across East Texas! If you were fortunate enough to enjoy one of these dinners, you knew they were quite the experience! Ma’am never officially shared the recipe with anyone, and there’s a bit of debate in my family. I think my version is the closest, if I do say so myself. ;) Good technique is just as important as using food ingredients in this one. All explained below! Ma’am’s Spaghetti Sauce: 1.5 lbs ground chuck 1/2 yellow onion, diced 1 green bell pepper, finely diced 1/2 cup mushrooms, thinly sliced 1/2 cup grated carrots 1/2 bottle white wine 2 Tbsp tomato paste 1 jar San Marzano tomato puree 1 can crushed San Marzano tomatoes Italian seasoning Sea Salt Parmesan cheese rind 1 tsp table sugar (there is some debate this should be grape jelly…I refuse, but you do you.) Serve over 1 package spaghetti noodles In a large Dutch oven, brown your very finely diced vegetables and saute in olive oil until translucent. Add your ground chuck a bit at a time. This will add a fair amount of fat once rendered, and we’re going to use it for flavor. Let the meat and veggies cook in the fat until almost all of the liquid has evaporated and the meat has a really nice brown to it. You shouldn’t have much fat left once you’re through with this step. I usually end up keeping it on medium high for 20 minutes to get the result I want. Add your white wine and tomato paste and stir. Once incorporated, add your tomato puree and crushed tomatoes. Add a little salt and Italian seasoning to taste. Add a bay leaf and your Parmesan rind, and let simmer for 4 hours. Check on it every hour or so, and add your sugar about an hour before ready to serve. Serve over spaghetti noodles or fettuccine and enjoy!! LTKSeasonal LTKHome LTKVideo
