One year ago I decided I was going to train for the Derby mini marathon. I immediately started running when we got back to Nashville that weekend. Freeman was the biggest support to encourage me and make sure I had everything I needed to be able to train and complete my goal.

I cried when I saw the finish line. Partially out of excitement but I think the real reason was I did the hard thing I challenged myself to do. This last year has been one of the hardest, and running was something I could channel it all into. And yesterday, I left a lot of anger and sadness out on the course. Not all of it because I don’t think that is possible.

It was something to cling to… if I could do this hard thing then I can keep pushing forward in our walk with infertility. At times it’s overwhelming, but I choose to believe that our time will come. And in the mean time, I’m going to keep living and loving life with my sweet husband.

Also, shout out to the Moehlman and Barnes crew for being my cheerleaders yesterday!!

We closed out another golf tournament paired with a killer show at the Ryman Auditorium where we got to present checks to 5 of our incredible community partners.

A sweet friend captured this photo during the check presentation, and it holds so much for me. Getting to stand on one of the biggest stages in country music alongside Tracy Lawrence while spotlighting leaders making a real difference in our community is something I don’t take lightly.

I’m endlessly grateful for my job, the people I get to work with, and the life this path has given me. It’s not lost on me that this is such a unique and fun career, and younger Amanda never would have believed this would one day be her reality.

5 years ago I could not have imagined how far life would take us, and I’m really thankful I get to live it. 🤍

Completed my first outdoor run of this training season leading up to my half marathon 🏃🏻‍♀️

I’m officially running a 10K in March and working my way toward my first half marathon in April!

That first outdoor run was definitely an adjustment… but I did it. And that’s what matters.

I’m really looking forward to seeing this through and continuing to grow as a runner. 🤍

Fun night out last night ✨

We plan intentional dates every week, but once a month we take it a step further with what we call a “fancy date.” We get dressed up, we laugh, we reflect, and truly soak up time together. It’s easily become one of our favorite things to do.

I’ve always heard people say, “never stop dating your spouse,” and I believe that wholeheartedly. Life moves fast for us most of the time, so slowing down and spending quality time together is always worth it.

Inspiration for this one comes from one of my favorite restaurant dishes…Mango Chile Chicken!

This is a favorite from @chilis! I made it a little different when it comes to the sides. I did some premade @bensoriginalusa rice and some veggies! Broccoli for me and green beans for Freeman! Mainly because he isn’t as big of a broccoli fan as me.

This dish is so yummy! Anything with mango pico de gallo makes me happy 😋

Another birthday party…another cake. This one was for Freeman’s birthday celebration this past weekend! I usually make this cake as a bundt cake, but after a few times of eating it we realized it tastes a lot like our wedding cake. Which is an apple cinnamon spice cake 😍 I remade our wedding cake this past year for our anniversary, and this is his favorite cake that I make!

Yes I know it’s a crumb coat, but Freeman isn’t a big fan of icing. So when I make cakes for him I do minimal frosting for his preference!

We made pasta for the first time from SCRATCH! I’ve said for years that I want pasta from scratch to be a norm for us, but I’ve never had the kitchen that was big enough to do so! Make my first sourdough starter with me!!

I’ve waited for this season of life for so long. We finally have a house that we are making our home. I have a kitchen with plenty of space to experiment and try new recipes every day if I want! We have a home large enough to host friends and family.

We are building such a beautiful life together. I don’t say that to brag and say “hey look at us.” It’s to say we have worked so hard separately and together to get to this spot in life. And I cannot wait to see where this life takes us!

Ingredients: (5 servings)
• 1.5 lb lean ground beef
• 1 family-size bag jasmine rice (microwave)
• 1 bag frozen riced cauliflower
• 1/2 white onion, diced
• Minced garlic
• 2 eggs
• 3 Tbsp low-sodium soy sauce
• 1/2 cup teriyaki sauce (add more if you like it saucy)
• Salt, pepper, garlic powder

Directions:
Brown ground beef with light salt, pepper, and garlic powder. When almost finished, add a dash of soy sauce and a drizzle of teriyaki to coat the meat. Remove beef from the pan and set aside.

In the same pan, sauté onion, garlic, and riced cauliflower. Season with pepper and a dash of soy sauce. Once softened, add eggs and scramble directly in the pan.

Stir in cooked rice, then pour in soy sauce and teriyaki. Mix until everything is well coated. Add ground beef back to the pan and toss to combine.

Serve hot or portion out for meal prep. So easy. So good. 🤍

Okay!! @thecakebakeshop is NOT overhyped! Everything we had was phenomenal! And we went in the evening and barely waited! However, we did get the last of the snickerdoodle cheesecake bars and one of the last peanut butter mousse pies. If you are open to anything definitely go for an evening stroll on the boardwalk and enjoy your treats under the lights by the water. If you are more particular about your choices, I would say go earlier in the day but be prepared to wait.
