Mini S’mores Cookie Pies 🍫🔥

You have to try these—they’re gooey, chocolatey, and next-level delicious. Here’s how to make them:

You’ll need:
• Mini graham cracker crusts (store-bought)
• Reese’s peanut butter cups
• S’mores-style marshmallows (the flat kind made for s’mores)
• Chocolate chip cookie dough (pre-portioned kind works great)
• Optional: kitchen torch

How to make them:
1. Preheat your oven to 350°F.
2. Place a Reese’s cup inside each mini graham crust.
3. Add a s’mores marshmallow on top. (Optional: give the top a quick toast with a kitchen torch!)
4. Take 2 cookie dough pieces, smush them together, and place on top of the marshmallow.
5. Bake for about 15 minutes, but keep an eye on them—they’ll puff up and may spill over a bit. Once the cookie top looks golden and set, pull them out.
6. Let cool a bit… or top with ice cream and dig in while they’re warm 😋

HOW I MADE THEM ✨

dip the top edges of the apple pie cookies into patriotic sprinkles

place on baking sheet + bake about halfway (slightly underbaked at this point)

remove from oven + gently press the flag sugar cookie into the center

place back into the oven + bake until fully cooked through

the slightly underbaked apple pie cookie helps the flag cookie bake right into the center perfectly 🇺🇸

Here’s the lemon posset recipe 🍋💛

you’ll need:
• 8 lemons (for the cups + fresh juice)
• 2 cups heavy cream
• 2/3 cup sugar (adjust to taste—add more if you like it sweeter)
• 8 tbsp fresh lemon juice
• optional: lemon zest + a splash of vanilla

slice the lemons in half and scoop out the inside.
use a strainer to press the pulp so you get fresh lemon juice

in a saucepan, bring the cream + sugar to a gentle boil and let it simmer a few minutes, then remove from heat
immediately stir in the lemon juice (and vanilla if using)

let it sit about 5 minutes, then strain if needed and pour into your lemon halves

chill for at least 3–5 hours (i did overnight)

that’s it 🤍

top with berries, mint, flowers, or even brûlée the tops if you want to dress them up ✨
