Simple Homemade Blueberry Muffins 2 cups blueberries (frozen or fresh) 2 cups all purpose flour 2 tsp baking powder 1 cup (plus 2-3 tbsp for sprinkling) sugar 1/4 tsp salt 2 eggs 3/4 cup milk 1/2 cup butter ( French butter 👌🏼) 1 tsp vanilla extract 🫐 Preheat oven to 375 and prep a 12 cup muffin pan with liners ( grabbed these from Walmart) 🫐 Cream the butter some before adding the sugar. I used a fork, but a mixer will also be good! 🫐 After creaming the butter and sugar, add the vanilla and mix. Then mixing in the milk. 🫐 Add the eggs, one at a time, incorporating the first one in before adding the second egg. 🫐 In a separate bowl, mix the flour, salt, and baking powder. 🫐 Add half the flour mixture to the butter mixture and mix, then add the rest of the flour mixture. 🫐 Mix until everything is just incorporated, then fold in the blueberries. 🫐 Fill each muffin cup about 3/4 full with the batter, then sprinkle the reserved sugar on top of each one. 🫐 Bake for ~15 minutes or until edges are lightly browning and the middle is set. 🫐 Don’t forget to add that butter slice to the middle 👌🏼 LTKHome LTKParties LTKFamily
