Simple Homemade Blueberry Muffins
2 cups blueberries (frozen or fresh)
2 cups all purpose flour
2 tsp baking powder
1 cup (plus 2-3 tbsp for sprinkling) sugar
1/4 tsp salt
2 eggs
3/4 cup milk
1/2 cup butter ( French butter ππΌ)
1 tsp vanilla extract
π« Preheat oven to 375 and prep a 12 cup muffin pan with liners ( grabbed these from Walmart)
π« Cream the butter some before adding the sugar. I used a fork, but a mixer will also be good!
π« After creaming the butter and sugar, add the vanilla and mix. Then mixing in the milk.
π« Add the eggs, one at a time, incorporating the first one in before adding the second egg.
π« In a separate bowl, mix the flour, salt, and baking powder.
π« Add half the flour mixture to the butter mixture and mix, then add the rest of the flour mixture.
π« Mix until everything is just incorporated, then fold in the blueberries.
π« Fill each muffin cup about 3/4 full with the batter, then sprinkle the reserved sugar on top of each one.
π« Bake for ~15 minutes or until edges are lightly browning and the middle is set.
π« Donβt forget to add that butter slice to the middle ππΌ
