Scandinavian Almond Cake — simple, cozy, and perfect with a cup of coffee on a cold December morning. ✨

Soft inside, a little crisp on the edges, and just… classic.
It’s the perfect cake for the Christmas season.

My mom (100% Scandinavian) gifted me this pan last Christmas and it’s now a new family tradition.

Should I share more European holiday bakes? 🎄✨
Save this one for your Christmas morning baking.

Beat together:
• 1 ¼ cups sugar
• 1 egg
• 1 ½ tsp almond extract
• ⅔ cup milk

Add:
• 1 ¼ cups flour
• ½ tsp baking powder

Add:
• 1 stick melted butter
Beat well.

Spray almond cake pan with baking spray + light flour coat. Add a sprinkle of almonds for that textured top. Add the batter and bake at 350°F for 40–50 minutes, until edges are golden and center tests clean. Cool and sprinkle with powdered sugar.

Is the cooking oil in your cabinet in a clear bottle or a dark bottle? This one detail can make all the difference between good and bad oil.

Rancid oil not only tastes terrible, but it’s also bad for you and can cause inflammation!

Luckily, there are a few super simple tips for buying and storing your favorite oils to make them last longer:

1) Buy oils in a dark glass container.
2) Don’t buy in bulk. Once opened, oil goes bad in 6 months.
3) Don’t store your oils in cute clear containers by your stove. Choose ceramic containers if you’re keep them out or store them in a dark space.

There’s nothing more comforting than the warm, spicy aroma of freshly baked PUMPKIN SCONES wafting through the kitchen.

They’re the perfect blend of fall flavors, combining the rich taste of pumpkin with a hint of cinnamon, nutmeg and a frosting drizzle.

To make the baking experience even better, I’ve paired this delightful recipe (below) with some of the best bakeware recommendations from Good Housekeeping.

These top-rated tools will ensure your scones and all of your holiday goodies are baked to perfection every time!

1) BEST OVERALL - Circulon 10-Piece NonStick Bakeware Set.

PUMPKIN SCONES -

Ingredients:
• Scones -
▢ 2 cups all purpose flour
▢ ⅓ cup brown sugar
▢ 1 teaspoon baking powder
▢ ½ teaspoon baking soda
▢ 1 teaspoon cinnamon
▢ 2 teaspoons pumpkin pie spice
▢ 1 egg
▢ ¼ teaspoon salt
▢ ½ cup pumpkin puree
▢ 3 tablespoons milk
▢ ½ cup butter
▢ 2 teaspoons vanilla extract
• Glaze -
▢ 1 cup powdered sugar
▢ 2 tablespoons milk

Instructions:
1) Preheat oven to 400F. Prepare a baking sheet with parchment paper.
2) Combine the dry ingredients. Add cubed butter and use a fork to combine.
3) In second bowl add the wet ingredients. Whisk until combined.
4) Mix wet and dry ingredients. I used a stand mixer but a spoon works too. Combine until a dough ball forms.
5) Sprinkle some flour on your counter. Use your hands to make a solid ball (won’t take much) Use a rolling pin to roll the dough into a circle, 1/2” thick. Using pizza cutter, slice the dough into triangles.
6) Place mini scones onto prepared baking sheet and bake for 10-12 minutes or until a toothpick comes out clean.
7) While scones are baking, prepare your glaze. In a small bowl whisk confectioners sugar and milk until smooth.
8) Cool scones for 10 minutes. Drizzle glaze on each scone.

Quiet kitchen moments are completely worth it.

I’m able to soak in the peace and beauty of a clean and calm space while working on tonight’s menu. I can hear the birds chirping outside, the coffee tastes just right and the subtle scent of a burning candle warms my heart.

Soon the chaos of a full house will erupt and I love that too but I’m cherishing the quiet moments this Summer.
