Mini Pumpkin Reese’s 🎃 Chef’s Kiss & SO EASY to make! 🤌 Ingredients: ✨1/2 cup creamy peanut butter (used natural peanut butter but any will work) ✨2T butter ✨2T brown sugar (firmly packed) ✨1/2 tsp salt ✨1/2 tsp vanilla extract ✨1/2 cup powdered sugar ✨2 bags chocolate chips ✨1T coconut oil ✨Pumpkin molds Directions: 1. In a small pot, combine peanut butter, butter, brown sugar, and salt. 2. Cook over medium heat, stirring constantly, until melted. Add vanilla extract and powdered sugar stirring until fully incorporated and smooth. 3. Transfer to small bowl and chill in refrigerator. 4. In a small bowl add chocolate chips (I started with one bag at a time) add coconut oil and melt in microwave until smooth and creamy, stirring every 30 seconds. 5. Place pumpkin molds on a baking sheet covered in parchment paper (for easy clean up). 6. Spoon melted chocolate into the bottom of the pumpkin molds. 7. Form a small ball with the chilled peanut butter filling (about a teaspoon-ish) if using natural peanut butter it may be crumbly but just pack in firmly to form ball. 8. Add peanut butter balls to mold on top of the chocolate. Cover peanut butter balls with additional chocolate to cover completely. 9. Tap molds to level and place in the fridge or freezer to harden. 10. Transfer to dish and keep in refrigerator.
