easy and cheap lunch idea that’s on the healthier side 🤤 So at the beginning of the week, I’ve been making a double batch of jasmine rice whenever I make it for dinner (typically with my teriyaki salmon or bourbon chicken) and then use it for lunches for myself for the rest of the week. I’m obsessed with cucumbers so I’ll slice those up and put a big scoop of hummus on top with ground black pepper and it’s soooo delicious! (I’ve also added some little tomatoes or left over chicken breast, but my favorite is just this simple combo) So easy and quick to make plus you don’t feel like you’ve eaten too heavy 🫶 Plus these Stacy’s Parmesan garlic and herb pita chips are littyyyyyyy with some hummus!
