Iced oatmeal cookies 🤤 Yall these are sooo good. I made the dough a couple days ago and then set it in the fridge & pulled it out and baked tonight then dipped in the frosting. I loveeeee oatmeal cookies & this is a homemade recipe for those delicious packaged iced oatmeal cookies. Trust me, this one is sooo much better and worth the work (which I enjoy anyways bc Gunner always helps me so it’s a bonding thing for us) Recipie: 2 cups old fashioned oats (ground finer- I used my ninja) 2 cups all purpose flour 1 teaspoon baking soda I teaspoon salt 1 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1 cup unsalted butter (room temp) 1 cup brown sugar 1/2 cup granulated sugar 2 large eggs 1 tablespoon dark molasses (I used grandmas brand) 2 teaspoons pure vanilla extract Icing: 1 1/2 cups powdered sugar 1/4 teaspoon pure vanilla extract 1.5 - 2 tablespoons milk (The more liquid you add, the runnier the icing so if you want a thicker icing, add milk slowly and stir to the consistency you desire) •whisk pulsed oats, flour, baking soda, salt, cinnamon, nutmeg, set aside. • using a standing mixer, beat the butter, brown sugar, granulated sugar together about 2 minutes. Add eggs, molasses, & vanilla. Beat on high speed until well combined. •add the dry ingredients slowly on low until well combined. Cover & chill dough for 45 minutes or a few days. • scoop cookie dough onto baking sheet.
