I’ve been sick 🤒 for a couple days and this soup hit the spot!! Still macro friendly and easily trackable! Posted below are a couple fav kitchen products (and a couple inspos on my wish list) that I used during the process! Enjoy! 🧑‍🍳

🧀 Chicken Cheddar Broccoli Soup 🥦

Prep Time: 15 min
Cook Time: 30 min
Total Time: 45 min

Serves-6
•Nutrition Facts•
Serving size: 11.5 ounces
Calories: 341 cals
Protein: 32.5g
Carbohydrates: 11.8g
Fat: 18.2g

•Ingredients•

•2 Tablespoons butter
•1 cup yellow onion (diced)
•1 Tablespoon garlic (minced)
•2 Tablespoons flour
•4 cups unsalted chicken stock
•1 cup low-fat 1% milk
•1/2 teaspoon salt
•1/2 teaspoon pepper
•1 teaspoon garlic powder
•1 teaspoon onion powder
•10 ounces raw broccoli florets (basically a full crown without the stem)
•1 pound cooked chicken (diced )
•2 cups reduced-fat shredded cheddar cheese
•1/4 cup shredded Parmesan cheese

•Directions•

1. Melt butter in a large pot over medium-high heat. Add onion and cook for 3-5 minutes or until tender. Add minced garlic and sauté for an additional minute. Whisk in flour and cook for a few minutes until golden brown.

2. Add chicken stock and milk and stir to combine, bring to boil and then reduce to simmer. Season with salt, pepper, garlic powder and onion powder. Let cook for 10 minutes or until slightly thickened.

3. Add broccoli and chicken and let simmer for 20 minutes, or until broccoli is tender.

4. Mix in cheddar cheese and parmesan cheese until melted and combined then remove from heat and serve.

5 star Recipe:
•1/2 cup old fashioned oats
•1/2 cup choice of milk (*I use almond or fairlife for extra protein)
•1 scoop vanilla protein (I use Legion or 1st Phorm)
•1/2 tbsp PB2 or *crunchy all natural PB
•2 tbsp plain or *vanilla Greek yogurt
•1/2 tbsp *raw honey or SF maple syrup
•1/2 tsp vanilla extract
•1 tbsp Lillys choc chips
•1 tbsp chia seeds
•pinch of salt
•cinnamon to taste

*is what I use 😊

•stirrrrrrr and place in fridge overnight.

I eat mine straight outta the fridge the next day but you can warm them if you prefer! They are so easy to throw in my bag for work the next day!
