Southern Slow-cooked Butter Beans 🤍 Southern Soul Food Series | Part 1 I love serving this as the main dish, but it’s just as good as a Southern side alongside catfish, fried chicken or pork chops! ✨ Follow along for more in this series! What You Need: * 1 (16 oz) bag frozen butter beans * 4 oz torn prosciutto or chopped bacon * 1 small onion, diced * 1/2 cup brown sugar * 6 cups chicken stock * 4 tablespoons butter * Salt & Pepper to taste To Make: 1. In a large Dutch oven, cook the chopped prosciutto and diced onion over medium heat until the onion is soft. 2. Stir in the brown sugar and cook until it has dissolved. 3. Add the frozen butter beans and pour in 6 cups of chicken stock. Bring everything to a boil. 4. Reduce the heat to a gentle simmer, cover, and cook for 45–60 minutes, stirring occasionally, until the butter beans are tender and the broth has thickened. 5. Season with salt and pepper to taste. Stir in 4 tablespoons of butter and let it simmer for another 5–10 minutes. 6. Ladle over basmati rice, crack a little more fresh black pepper over the top and serve with a side of warm cornbread.
