Cozy Caramelized Onion Pasta đâ¨â¨This pasta is packed with slow-cooked flavor but super simple to throw togetherâperfect for a cozy night in. Made with pantry staples and a splash of cream (no heavy sauce needed), itâs rich, a little sweet from the onions, and finished with lemon + herbs for balance. Everything I used is linked belowâincluding the protein pasta, microplane grater, braiser cast iron pan, linen napkins, and my everyday plates. ⨠Ingredients:â¨â 4 yellow onions, thinly slicedâ¨â 4 garlic cloves, mincedâ¨â Âź cup oil-packed sun-dried tomatoes, choppedâ¨â ½ cup chopped spinachâ¨â Âź cup chopped fresh parsleyâ¨â Splash of heavy cream (~2â3 tbsp)â¨â Juice of ½ lemonâ¨â Salt + pepper, to tasteâ¨â Cooked pasta (I used protein pasta!)â¨â Reserved pasta waterâ¨â Olive oil + optional pat of butterâ¨â Optional: grated parmesan for topping ⨠Instructions: 1. Caramelize onions low + slow (~30 mins) in olive oil (and butter if using) until golden and jammy. 2. Add garlic + sun-dried tomatoes. Cook 1â2 mins. 3. Stir in spinach + parsley; let wilt. 4. Add splash of cream + a bit of pasta water. Season with salt + pepper. 5. Toss in cooked pasta, add more pasta water as needed to coat. 7. Finish with lemon juice + parm if youâd like.
