Every spring gathering needs a signature drink like this 🌼 The Oopsie Daisy is the prettiest sip of the season, complete with floral ice cubes for a fun finishing touch that can easily be made as a cocktail or a mocktail! It’s light, refreshing, and exactly what you want to drink on a warm spring day. Check out the recipes below to make this spring sip for yourself! 💛

Floral Ice Cubes

Ingredients:
-1 bunch of smaller sized flowers
-1.5 cups of water

Directions:
-Take flowers and individually place them in the ice cub tray mold, cutting them right below the bud.
-Put them in your freezer until completely frozen.
-Add them to your favorite cocktail, mocktail, or even just a glass of water for a fun touch to your spring drink!

Oopsie Daisy

Ingredients:
-2 oz limoncello
-1.5 oz gin
-Half a lemon freshly squeezed
-1 oz simple syrup
-Top with sparkling water
-Floral ice cubes
-this drink can also be made as a mocktail!

Directions:
-Add ice, limoncello, gin, lemon, and simple syrup into a cocktail shaker. Shake until combined.
-Pour over floral ice cubes top off with sparkling water.

Sweet meets salty in the most delicious way with these Potato Chip Rice Krispie Treats 😋 They’re super easy to make, require only 4 ingredients, and are such a fun twist on a classic favorite. The best part is there’s no baking required so they come together in just minutes! Scroll for the full recipe and my outfit details!

Ingredients:
-4 tbsp butter
-10 oz mini marshmallows
-8.5 oz Ruffles potato chips
-1/2 cup chocolate, melted

Instructions:
-Melt butter in microwave. Add in marshmallows and stir in until fully combined.
-Gently fold in the potato chips until they’re covered in the marshmallow coating.
-Spread the potato chip mixture on a temp-tations platter.
-In a separate bowl, melt chocolate in the microwave and stir until smooth. Drizzle the melted chocolate over the potato chips.
-Enjoy!

I’ve been making this Crispy Rice Cucumber Salad on repeat lately so I had to share it with all of you! 🍚 🥒🥗 I love it because it’s so easy to make, it’s full of texture and crunch, and the lemon tahini dressing takes it to the next level! You can even customize it by adding in your favorite protein depending on what you’re in the mood for 😋 Try out the recipe below - can’t wait to hear what you think of this dish!

Crispy Rice Cucumber Salad with Lemon Tahini Dressing  Makes 4 large servings  Ingredients for the Crispy Rice:
2 cups cooked rice, cooled (I used Instant Rice but can use jasmine rice, brown rice, etc.)
2 tsp soy sauce
2 tsp chili crisp/crunch (feel free to pair down or leave out depending on your preferred spice level!)
1 tbsp sesame oil

Ingredients for the Salad:
1 English cucumber, thinly sliced
1 cup edamame
1 cup green onions, chopped
1/2 cup fresh mint, chopped
1 avocado, chopped
1 cup salted peanuts, finely chopped

Ingredients for the Lemon Tahini Dressing:
1/2 cup olive oil
1/3 cup lemon juice (2 lemons) + zest of both lemons 3 tbsp tahini
1 1/2 tb maple syrup
2 cloves garlic, mashed
1 tsp cumin
 Directions
1. First prepare the crispy rice topping. Preheat oven to 400F. Line a baking sheet with parchment paper. Add rice to the baking sheet (should be both cooked and cooled).  2. Toss well with the soy sauce, chili crisp and sesame oil.  3. Bake for 50 minutes, tossing half way through.  4. Remove from the oven once the rice is crispy and set aside.  5. Next, chop all of the ingredients for the salad and add to a large bowl.  6. Then make the dressing by whisking together all of the ingredients. Taste and adjust seasonings as needed.  7. Pour dressing over the salad. Add the crispy rice last, toss and enjoy!

Corned beef and cabbage… but make it crispy! ☘️These Fried Corned Beef & Cabbage Bites take a classic St. Patrick’s Day favorite and make it fun, crunchy, and perfect for snacking. My mom, Gail, shared some tips for putting your own spin on this dish so you can take this appetizer to the next level! I’ve also linked my outfit details so you can shop my look!

Total Time: 25 mins
Prep Time: 20 mins
Cook Time: 5 mins
Yield: 6 servings

INGREDIENTS
    •    2 cups cooked cabbage, coarsely chopped
    •    1 cup (packed) cooked corned beef, coarsely chopped
    •    Salt and pepper, to taste
    •    6 wonton wrappers
    •    1 egg

DIRECTIONS
    1    Place cabbage and corned beef in food processor, and season with salt and pepper to taste. Pulse until pieces are pea-sized.
    2    In a small bowl mix egg and 2 tablespoons water until well combined
    3    Working one at a time, place wonton wrapper down on work surface with one corner facing you. Place about ⅓ cup of filling into center of wrapper and form a 4” horizontal log. Using a pastry brush, apply a light coat of egg mixture to all sides of wonton wrapper. Tuck the wrapper from corner to corner, while pinching around the edges to enclose the filling.
    4    Preheat oil to 350°F or preheat air fryer to 350°F. Working in 2 batches, fry wontons until lightly browned and crispy, about 3-5 minutes. If using air fryer, bake for 12 minutes and flip midway through to allow both sides to get crispy. Serve on a temp-tations® tray with your favorite sauces!
