I'm using a delicious cashew cream cheese like spread from @Treeline and subbing in rice paper wraps for the bread. The result was pure GF & DF perfection with that refreshing crunch of cuke🥒

Made an easy #plantbased dinner since I was trying to use up some broccoli 🥦 & cauliflower I had in the fridge.

Basically everything went into the air fryer at separate times.
Olive oil, salt & pepper were the only seasonings, but the clincher were the sauces.
I drizzled my homemade avocado 🥑ranch (recipe linked) and some sriracha mayo over the whole lot for a load of flavor.

The extra-firm tofu is simply cubed, tossed with rice flour, salt & pepper, then spends about 20-25 minutes in the air fryer to crispy perfection.

This #secret ingredient icebox pie will surprise everyone. 💕
Pull out a can of chickpeas & drain off the liquid into a mixing bowl. Beat until white & fluffy just like egg whites. It makes a great fluffy whipped "cream" then fold in strawberries 🍓 (or your fruit of choice) and either some cream cheese or non-dairy whipped topping.

I have the best daughters (and bonus daughters) that treat me like a queen 👸

Yesterday, my youngest @missfox2_ treated me to a pre-Mother’s Day adventure since she has to work Mother’s Day.

She surprised me with a trip to the Dahlonega , where we explored the town, all the shops and had the sweetest tea room experience at waffles English tea House. The food and teas were excellent as was the service (our server was so bubbly and such a precious soul). She made the experience even more fun, and of course, the company was phenomenal as well 🥰

More shopping and wrapped it all up with a Matcha 🍵 at Dahlonega social (a 10/10 coffee spot)

🌸The fancy goat cheese soufflé is actually quite simple and wows everyone.

🌸An easy elevated bruleed grapefruit is something my mom used to make for her breakfast on the regular, but a simple Parmesan tortilla omelette is equally easy.

🌸The strawberry 🍓cardamom pancakes rely on a shortcut box Mix to have this in front of mama lickety-split and she will love how tasty they are.
🌸For something more hearty, try the twice baked breakfast potatoes or a lovely shakshuka egg skillet with crusty sourdough bread.
