Do you ever have those days where you simply must scrounge from the pantry & fridge to come up with dinner? I have lot of those & this experiment turned out very nicely.

A puny zucchini, pepperoni and a handful of olives left from our Italian New Year's Eve party, pasta, cheese, marinara ......but the star of the show & the thing that elevated this dish to company worthy was the truffle paste. Wow! Kapow! 🩷🩷🩷

This went from an ok pantry & fridge raid pasta to something hubby wants me to make again. 😉

Recently had my annual eye 👁️ exam & although a bit overdue, I thought it was a great time to pick out some new frames 👓 while I also restocked my contacts.

Take the family on a trip to Morocco without leaving your kitchen & all in 20 minutes ⏰. These kofta (made either with ground lamb or beef) are so easy to mix up. The skewers can cook outdoors on the grill or indoors in an indoor grill/griddle, grill pan or oven. So adaptable. If you want to further save time, you can even omit the skewer...but hey...who doesn't like food on a stick 😉

Panini is our easy go to for weeknight meals when the clock is ticking and stomachs are growling. 😉
My version uses sourdough bread for that perfect texture, peppered Boarshead turkey, crisp apple slices, melty cheese and a combo of mayo & harissa (a fabulous middle eastern red pepper paste) spread on each slice.

Griddle on a skillet, panini maker or electric griddle and a few minutes later you have a crave worthy sammie to serve with crisp veggies or some chips.

We all hate #foodwaste, and although buying my nuts in bulk at Costco saves me money, it's only helpful if none of those nuts go to waste. If they turn rancid (go bad) before I use them all, then I've wasted $$. This is especially helpful if you purchase raw nuts, which we often do.

Keep a small amount in your pantry, say the amount you'd use within a month, and keep the rest in the fridge or even the freezer for longer term storage. Your wallet will thank you 😉
