Panini is our easy go to for weeknight meals when the clock is ticking and stomachs are growling. 😉 My version uses sourdough bread for that perfect texture, peppered Boarshead turkey, crisp apple slices, melty cheese and a combo of mayo & harissa (a fabulous middle eastern red pepper paste) spread on each slice. Griddle on a skillet, panini maker or electric griddle and a few minutes later you have a crave worthy sammie to serve with crisp veggies or some chips.
