Creamy Chicken & Broccoli Pasta with Parmesan Ingredients • 1 box penne pasta • 2 large chicken breasts, cooked and shredded • 1½ tablespoons olive oil • 1 teaspoon salt • 1 teaspoon black pepper • 1 teaspoon garlic powder • ½ teaspoon onion powder • 1 teaspoon dried oregano • 2 splashes red pepper flakes (to taste) • 1 bag frozen broccoli or 1 head fresh broccoli, chopped • ½ cup chicken broth • 1½ cups heavy cream • ½ cup grated Parmesan cheese • ½ cup shredded Colby Jack cheese • Extra Parmesan for topping Instructions 1. Cook the Pasta Cook penne pasta according to package instructions. Drain and set aside. 2. Prepare the Broccoli • If using fresh broccoli, steam or blanch until just tender. • If using frozen broccoli, cook according to package directions. 3. Make the Sauce In a large skillet over medium heat, heat 1 tablespoon of butter & the olive oil. Add broth & cream. Stir together til combined. Add salt, pepper, garlic powder, onion powder, oregano, and red pepper flakes. Bring to a simmer. Mix in Parmesan and Colby Jack cheese, stirring until melted and smooth. 5. Add Broccoli Stir in cooked broccoli and shredded chicken if you want the chicken mixed in or you can serve without for a vegetarian dish. Let everything heat through and sauce thicken slightly (about 5 minutes). 6. Combine with Pasta Add cooked pasta to the skillet and toss to coat evenly in the sauce. 7. Serve Top with extra Parmesan cheese and serve warm.
