Easy Baked Chicken Spaghetti 🤍

This is one of those dinners that’s always a hit… creamy, cheesy, and perfect for busy weeknights 🙌🏼

I love making this when I need something simple that I know everyone will eat (and the leftovers are SO good too 👏🏼)

Ingredients:
• 12 oz spaghetti
• 2 cups cooked shredded chicken
• 2 cans (10.5 oz) cream of chicken soup
• 1 (10 oz) Rotel (undrained)
• 1 cup sour cream
• 2 cups shredded cheddar (divided)
• ½ tsp garlic powder
• ½ tsp onion powder
• Salt & pepper

Directions:
1️⃣ Preheat oven to 350°
2️⃣ Cook spaghetti and drain
3️⃣ In a large bowl, mix chicken, soups, Rotel, sour cream, 1½ cups cheese, and seasonings
4️⃣ Stir in cooked spaghetti
5️⃣ Pour into a greased 9x13 dish
6️⃣ Top with remaining cheese
7️⃣ Bake 20-25 minutes until hot and bubbly

Let it sit a few minutes before serving so it sets up perfectly 👏🏼

Caesar Chicken Bake 🤍

This one is SO easy but tastes like something you’d order at a restaurant 👏🏼 crispy, cheesy, and full of flavor!!

Perfect for a busy night when you want something simple but still really good 🙌🏼

Ingredients:
• 2–3 chicken breasts
• Salt, pepper, garlic powder
• 1 cup Caesar dressing
• 4–6 slices provolone cheese
• 1½ cups croutons (crushed)
• 3 tbsp butter, melted

Directions:
1️⃣ Preheat oven to 375°
2️⃣ Place chicken in a greased baking dish
3️⃣ Season with salt, pepper, and garlic powder
4️⃣ Pour Caesar dressing over the chicken
5️⃣ Top with provolone cheese

Topping:
6️⃣ Crush croutons and mix with melted butter
7️⃣ Sprinkle over the top

8️⃣ Bake 30–35 minutes until chicken reaches 165° and topping is golden and crispy

Serve with a salad or your favorite veggie 🤍

SUPER EASY Crockpot Enchilada Casserole 🤤

Looking for a quick, flavorful dinner that’s perfect for busy families? This Crockpot Enchilada Casserole is a winner—packed with protein and veggies, with minimal ingredients and maximum taste!

Ingredients:
• 1 diced onion
• 1 can black beans (rinsed & drained)
• 3 boneless, skinless chicken breasts
• 1 packet fajita seasoning
• 3/4 can enchilada sauce (from a 15 oz can)
• 1 bag frozen corn
• 8 flour tortillas (cut into pieces)
• Shredded Mexican blend cheese (to taste)
• Optional Toppings: sour cream, hot sauce, shredded lettuce, avocado, jalapeños

Instructions:
1️⃣ Load the Crockpot: Add the diced onion, black beans, chicken breasts, fajita seasoning, and enchilada sauce. Cook on HIGH for 4 hours.
2️⃣ Shred the Chicken: Once cooked, shred the chicken right in the crockpot.
3️⃣ Add Corn: Stir in the frozen corn and cook for another 15 minutes.
4️⃣ Mix in Tortillas: Add the cut tortillas and mix thoroughly.
5️⃣ Cheesy Finish: Top with shredded cheese, cover, and let melt for 5-10 minutes.
6️⃣ Serve: Spoon into bowls and finish with your favorite toppings.

🥪SUPER EASY ITALIAN GRINDER SUBS — you guys have to try this!!!! This recipe is perfect for the beach or pool on a hot summer day! (recipe below 👇)

Ingredients:
• Shredded lettuce
• Salami
• Pepperoni
• Ham
• Provolone cheese
• Tomatoes
• Purple onion
• Pepperoncini peppers
• About ½ cup mayonnaise
• Olive oil
• Red wine vinegar
• Salt & pepper
• Sub rolls (or enjoy it as a salad!)

Directions:
1️⃣ Throw some shredded lettuce on your cutting board and top with salami, pepperoni, ham, provolone, tomatoes, purple onion, and pepperoncini peppers—then chop it all up.

2️⃣ Toss your chopped mixture into a mixing bowl and add about ½ cup of mayonnaise, a little olive oil, red wine vinegar, salt, and pepper.

3️⃣ Mix everything together until well combined, then spoon onto your favorite sub rolls—or skip the bread and enjoy it as a salad!

Easy Sausage Egg Biscuit Muffins 🍳
These are one of my favorite make-ahead breakfasts for busy mornings.

Here’s how to make them:
1️⃣ Brown a roll of breakfast sausage in a skillet.
2️⃣ Whisk eggs in a bowl.
3️⃣ Open a can of Grands biscuits and pull them apart.
4️⃣ Press one half of each biscuit into the bottom of a greased muffin tin to make your biscuit cup.
5️⃣ Add cooked sausage.
6️⃣ Pour in the eggs.
7️⃣ Top with shredded cheese.
8️⃣ Bake at 350° for about 15–18 minutes until golden and set.

These are great fresh, but they’re also perfect for meal prep.

Store in the fridge and reheat:
• Microwave: about 20–30 seconds
• Air fryer (my favorite): 2–3 minutes at 400°

From frozen:
• Air fryer: 3–4 minutes at 400°

Save this for easy breakfasts during the week! 💛

Y’ALL… 🤤 this one was a HIT at our house!

I needed a super easy dinner for a busy night of cheer carpool, so I literally put my husband in charge of cooking AND filming.

This Orange Chicken & Veggies Sheet Pan Meal is so simple, packed with flavor, and the best part is everything cooks on ONE pan. Perfect for those crazy weeknights when everyone is running in different directions.

Save this one because I promise your family will ask for it again!

Ingredients:
• 3 boneless skinless chicken breasts, cut into bite-sized pieces
• 1 onion, chopped
• 1 bell pepper, chopped
• 1 head broccoli, chopped
• Olive oil
• Salt & pepper
• Kinder’s Buttery Steakhouse Seasoning
• Paprika
• Panda Express Orange Sauce
• Green onions, chopped (for topping)

Directions:
1️⃣ Preheat oven to 400°F.

2️⃣ Chop your veggies (onion, bell pepper, broccoli) and place them in a large bowl.

3️⃣ Drizzle with olive oil and season with salt, pepper, and Kinder’s Buttery Steakhouse Seasoning. Toss to coat.

4️⃣ Spread the veggies onto a sheet pan and push them to one side.

5️⃣ In a separate bowl, add the bite-sized chicken pieces. Drizzle with olive oil and season with paprika, salt, pepper, and the same steakhouse seasoning. Toss to coat.

6️⃣ Add the chicken to the empty side of the sheet pan and drizzle orange sauce over the top.

7️⃣ Bake for about 25 minutes, or until the chicken is fully cooked.

8️⃣ Drizzle a little extra orange sauce on top and sprinkle with chopped green onions.

We served ours with egg rolls and fried rice, and the whole family cleaned their plates!

I turned 40 and it ended up being the sweetest, most simple day 🤍

The day before my birthday Chance and I kept our little tradition and went for a couples massage (the only thing I ask for every year 😂). Afterwards we grabbed brunch downtown since he actually had a free morning.

On my actual birthday I started the day with my favorite Hotworx workout (Hot Barre None) and a quick weights session… then made a Starbucks run for my favorite order, bacon & gruyère egg bites and my iced sugar-free caramel protein latte.

The rest of the day was full of all my favorite little things:
• listening to a new Audible book on my drive and walk
• catching up on comments and course work
• chatting with my beta course girls on our call
• helping at the middle school cheer clinic
• being surprised with cupcakes and a sweet gift from a friend
• Mexican for dinner (because obviously 🌮)
• coming home to flowers from my agency and cute graphic tees from Chance

Nothing extravagant… just a really good day that reminded me how grateful and blessed I am for this life, my family, and this amazing community here.

This Crockpot Burrito Bowl is a super easy crockpot meal that’s perfect for busy weeknights!

Just dump it in, let it cook, and dinner is DONE — no stress, no mess! I served mine over microwave rice to keep it extra simple, and my whole family gave it a thumbs up!

Ingredients:
•1 lb chicken breasts
•1 packet taco seasoning
•1 can black beans (drained & rinsed)
•1 can corn (drained)
•1 can Rotel (diced tomatoes & green chiles)
•2 cups chicken broth
•1 cup shredded cheese (optional)
•Microwave rice for serving
•Toppings: sour cream, avocado, salsa, lettuce, jalapeños, etc.

Instructions:
1.Spray your crockpot with nonstick spray
2.Add chicken to the bottom and sprinkle with taco seasoning
3.Add black beans, corn, and Rotel (undrained)
4.Pour in chicken broth
5.Cover and cook on LOW 4–6 hours or HIGH 2–3 hours
6.Shred chicken and stir everything together
7.Top with cheese, let melt, then serve over microwave rice
8.Add your favorite toppings and enjoy!

Creamy Crockpot Chicken Penne Bake

The easiest throw-it-all-in-and-go dinner! So creamy, cheesy, and packed with flavor.
Save this one for a busy night!

Here’s what you’ll need:
• 2–3 chicken breasts
• 2 tbsp onion powder
• 2 tbsp garlic powder
• 2 tbsp paprika
• Pepper to taste
• 1 (22 oz) jar Alfredo sauce
• 1 (24 oz) jar pasta or marinara sauce
• 1 block cream cheese (I used 1/3 less fat)
• 1 box high protein penne pasta
• 8 oz shredded mozzarella & provolone cheese blend

How to make it:
1️⃣ Add chicken to crockpot and season with onion powder, garlic powder, paprika & pepper
2️⃣ Pour in Alfredo, marinara, and add cream cheese
3️⃣ Cook on LOW for 6 hrs or HIGH for 3–4 hrs
4️⃣ When chicken is done, cook pasta on the stove
5️⃣ Shred the chicken (I use my favorite Amazon shredder!)
6️⃣ Add shredded chicken & pasta into the sauce and mix
7️⃣ Top with shredded cheese and cover until melted
8️⃣ Serve & enjoy — we love it with Caesar salad + breadsticks!
