Sheet pan quesadillas = the easiest way to feed a crowd 🌮✨ Crispy, cheesy, loaded with flavor, and all baked in ONE pan. Perfect for busy weeknights, game day, or when everyone’s hungry at once!
Sheet Pan Quesadillas
Ingredients:
3 cups rotisserie chicken
3 cups Monterey Jack cheese
12 burrito-sized flour tortillas
Melted butter
1 can black beans, drained & rinsed
1 can corn, drained & rinsed
2 avocados, diced
1 can Rotel tomatoes & green chilies
½ red onion, diced
1 cup sour cream
1 packet taco seasoning
Toppings:
Sour cream, guacamole, lime wedges, shredded lettuce/salad, fresh cilantro
Instructions:
1️⃣ In a large bowl mix chicken, cheese, black beans, corn, avocado, Rotel, red onion, sour cream, and taco seasoning.
2️⃣ Spray a sheet pan with olive oil or brush with melted butter. Lay tortillas on the pan, overlapping so they hang over the edges.
3️⃣ Spread the chicken mixture evenly over the tortillas. Place one tortilla in the center on top of the filling, then fold the overhanging tortillas over the top.
4️⃣ Brush the top with melted butter and place a second sheet pan on top (this keeps everything pressed and crispy).
5️⃣ Bake at 450°F for 25–35 minutes until golden and crisp.
6️⃣ Remove from oven and let cool slightly. Use a pizza cutter to slice and serve with your favorite toppings.

Guinness Dip 🍻🧀
Cheese + beer = the kind of math I fully support. 😍 Creamy, sharp, and perfectly malty — this dip gets better the longer it chills, so it’s perfect to prep ahead and serve with warm pretzels.

Recipe:
• 8 oz softened cream cheese
• Pinch kosher salt
• 2½ cups shredded cheddar
• 1 teaspoon Dijon mustard
• 2 tablespoons half & half
• ¼-ish cup Guinness beer
• 2 scallions, chopped (plus more for garnish)

Directions:

Mix cream cheese, salt, cheddar, mustard, and half & half until smooth.
Stir in Guinness and chopped scallions.
Cover and chill at least 1 hour (overnight is even better!).
Garnish with extra scallions and serve with pretzels.
Save this for your St. Patrick’s Day spread ☘️

This crab cheeseball is creamy, savory, and always the first thing gone 🦀✨ The perfect make-ahead appetizer for parties, holidays, or snacky girls’ nights.
You’ll need:
• 1 block softened cream cheese
• ½ cup mayo
• 1 tbsp Old Bay seasoning
• 1 tsp garlic powder
• ¼ tsp Worcestershire
• 1 cup shredded mozzarella
• 1 cup crab meat (imitation OR real both work!)
• squeeze of lemon juice
• squeeze of sriracha
Blend everything with a hand mixer (it’ll break the crab up a bit — that’s perfect). Transfer to a bowl, cover, and chill for at least 1 hour.
Remove, then roll or top with chopped pecans, parsley, and diced green onion. Serve with crackers or bagel crisps and watch it disappear.
