Sheet Pan Quesadillas Ingredients: 3 cups rotisserie chicken 3 cups Monterey Jack cheese 12 burrito-sized flour tortillas Melted butter 1 can black beans, drained & rinsed 1 can corn, drained & rinsed 2 avocados, diced 1 can Rotel tomatoes & green chilies ½ red onion, diced 1 cup sour cream 1 packet taco seasoning Toppings: Sour cream, guacamole, lime wedges, shredded lettuce/salad, fresh cilantro Instructions: 1️⃣ In a large bowl mix chicken, cheese, black beans, corn, avocado, Rotel, red onion, sour cream, and taco seasoning. 2️⃣ Spray a sheet pan with olive oil or brush with melted butter. Lay tortillas on the pan, overlapping so they hang over the edges. 3️⃣ Spread the chicken mixture evenly over the tortillas. Place one tortilla in the center on top of the filling, then fold the overhanging tortillas over the top. 4️⃣ Brush the top with melted butter and place a second sheet pan on top (this keeps everything pressed and crispy). 5️⃣ Bake at 450°F for 25–35 minutes until golden and crisp. 6️⃣ Remove from oven and let cool slightly.
