Trying to get my 10 year old to eat more vegetables so I made pumpkin zucchini chocolate chip sourdough muffins this morning! Recipe as follows: 1 3/4 cups flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 1/2 tsp cinnamon 1/3 cup sourdough discard 1/2 cup avocado oil (I substituted 1/3 cup pumpkin) 1/2 cup sugar 1/3 cup brown sugar 2 eggs 2 tsp vanilla extract 1 3/4 cup grated zucchini Bake at 425 for 5 minutes and then 350 for 15 minutes LTKSeasonal LTKHome LTKFamily
