mediterranean bowls are always in our rotation for an easy weeknight meal! healthy & packed with so many fresh flavors✨

Ingredients:
- 1 lb lean ground beef
- 1 lb ground lamb
- 1/2 red onion, diced finely
- 4-5 cloves garlic, minced
- 1/4 cup chopped parsley
- 1 tsp each salt & pepper
- 2-3 tsp @SPICEOLOGY Greek Freak seasoning
- 1/4 cup breadcrumbs

tzatziki 
- 2 cups nonfat Geek yogurt
- 1/3 cup fresh dill, chopped finely
- 2-3 cloves garlic, minced
- 1 cucumber (peeled, grated & squeeze water out)
- juice of 1/2 a lemon
- salt & pepper to taste

serve with:
- rice
- tomato & cucumber salad (add olive oil, salt & pepper to taste)
- hummus
- pickled red onion
- mini pita breads
- feta cheese crumbles

finally trying the viral tomato & feta pasta! definitely adding this to our weeknight meal rotation🍅✨ so quick, easy & insanely delicious

Ingredients:
- 24 oz cherry tomatoes
- 2 blocks feta cheese
- 1 garlic head, cut in half
- 1-2 tbsp olive oil
- 1 tsp each Italian seasoning, salt & pepper
*bake at 400°F for 25-30 minutes until tomatoes are blistered and cheese is melted. blend!

- 1 box cavatappi pasta
- shredded parmesan cheese
*broil for 2-4 minutes until cheese is bubbly

these honey garlic salmon bowls are a weeknight dinner staple in our house! insanely flavorful salmon bites with a sweet & spicy cucumber salad- healthy, fresh and so easy to make🍚🥒

I love using dried seaweed snacks to wrap everything up into the perfect bite! drizzle on some siracha mayo for an extra punch🌶️

Ingredients:
- skinless salmon filet, cut into cubes
- 1/3 cup soy sauce
- 1/4 cup honey
- 2 tsp sesame oil
- 4-5 cloves garlic, minced
- 1 tsp salt, 1 tsp pepper, 2 tsp onion powder
*let marinate for at least 10 minutes. air fry at 400°F for about 8-10 minutes, flipping and adding extra sauce halfway through.

cucumber salad
- 2 large cucumbers, sliced thinly and dried
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tsp sesame oil
- 1 tbsp honey
- 2 tbsp chili garlic crunch
- 1 tsp salt, 1 tsp pepper, 2 tsp garlic powder, 2 tsp onion powder

rice
- 1 cup jasmine rice
- 2 cups water
- 1 tbsp rice vinegar
- 1-2 tsp white sugar
- 1/2 tsp salt

top with
- green onion
- furikake flakes
- dried seaweed snacks
- optional: siracha mayo

this sausage & gnocchi sheet pan meal is my go to for an easy, always delicious dinner! roasted with cherry tomatoes, tossed in pesto & served with a ball of burrata- you are going to love🍅🌱🫶

Ingredients:
- 1 lb Italian sausage, broken into pieces
- 1 package gnocchi
- 16 oz cherry tomatoes
- 1 tbsp olive oil
- 1 tsp each salt, pepper, Italian seasoning
*bake at 415°F for 25-30 minutes
- 1/3 cup pesto
- big handful spinach
- ball burrata (drizzle with @Graza olive oil, salt & fresh cracked pepper)

starting the spring season off with this herb lemon skillet roast chicken dinner🍋🌿🍗with gemstone potatoes & brussel sprouts - it’s easy, flavorful, and so delicious!

I’m always a big fan of a one pan dinner- set it and forget it is the way to go!

Ingredients:
- 1.5 lb chicken thighs (bone in, skin on)
- 1.5 lb chicken drumsticks
- 24 oz gemstone potatoes, cut in half
- 12 oz halved brussel sprouts
- 2 tbsp avocado oil
- 1-2 tsp each salt, pepper, onion powder, garlic powder
- 1 head garlic cloves
- 1 lemon, cut into thin slices

marinade:
- 1/3 cup avocado oil
- juice of 1 large lemon (about 2 tbsp)
- 1 tbsp fresh rosemary, finely chopped
- 1/2 tbsp fresh thyme, finely chopped
- 1 tsp chicken bouillon
- 1-2 tsp each salt, pepper, onion powder, garlic powder
*marinate chicken in refrigerator for at least 20 minutes. save some marinade to drizzle on top

pre-heat the cast iron skillet on the stove until hot before placing potatoes and brussel sprouts cut side down. top with rest of ingredients then bake at 400°F for 45-55 minutes until chicken skin is crispy and cooked through to 165°F.

we are SO obsessed with this chili peanut crispy rice salad! paired with my honey soy salmon bites- I could eat it everyday🥜🌿🌶️🍚

packed full of green veggies & tossed with a drool worthy creamy chili peanut dressing, you have got to try this!

Ingredients:

rice
- 1.5 cups day old jasmine rice
- 2 tbsp white vinegar
- 1 tsp sesame oil
- 1 tbsp granulated white sugar
- 1/4 cup fried chili in oil
*bake at 400°F for 40 minutes stirring every 10 minutes until brown and crispy

salmon
- about 1 lb salmon filet, cut into cubes
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tsp sesame oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1 tsp pepper
*marinate for at least 10 minutes then air fry at 400°F for 10 minutes

dressing
- 1/3 cup soy sauce
- 1 heaping tbsp honey
- 1 heaping tbsp creamy peanut butter
- 1 tbsp fried chili in oil
- 2 tbsp white vinegar
- 1 tsp onion powder
- 1 tsp garlic powder
*blend

- 1.5 large English cucumbers, diced & dried
- 1 cup edamame
- 1/3 cup green onion, chopped
- 1/4 cup cilantro, chopped
- 1 large avocado, cubed & sprinkled with salt & pepper
- handful peanuts

- 1/2 stick butter, melted & 1/2 package taco seasoning

yogurt sauce
- 10 oz nonfat plain Greek yogurt
- handful cilantro
- juice of 1 large lime (about 1/4 cup)
- 1 tbsp sour cream
- 1 tsp salt
- 1 tsp chili powder
- 1/2 package taco seasoning

this is something I often order when I’m out, but making it at home is so easy and just as delicious!

Ingredients:
- 2 tbsp olive oil
- 1 shallot, diced finely
- 5-6 cloves garlic, minced
- 1-2 tsp crushed red pepper flakes (adjust to your spice preference)
- 3 tbsp tomato paste
- 1/4 cup vodka
- 1 cup heavy cream
- 1.5-2 cups pasta water (adjust for thickness)
- 1/3 cup grated parmesan cheese
- salt & pepper to taste
- 1 box penne pasta

cutlets:
- 3-4 chicken breasts, pounded thin
- 1/2 cup flour (season generously with salt, pepper, onion powder, garlic powder)
- 3 eggs
- @Kooshy Croutons Italian breadcrumbs
- flaky sea salt
*shallow fry in avocado oil until golden brown and crispy

these loaded fiesta potato bowls are a total weeknight game-changer! like @tacobell cheesy fiesta potatoes but leveled way up- super flavorful & customizable for the whole fam🥔🌮🌿🌶️✨

Ingredients:
- 4-5 russet postatoes, peeled and sliced (add olive oil, onion powder, garlic powder, salt, pepper, chili powder & cayenne pepper)
*bake at 425°F for 45 minutes flipping every 15 minutes. crank the heat to 450°F and bake another 10-15 minutes until brown and crispy.
- 1.5 lbs ground beef
- 1 yellow onion (3/4 for meat, save 1/4 for topping)
- 1 package taco seasoning
- 2 cups water
- 2 tbsp butter
- 2 tbsp flour
- 1 tsp each salt, pepper, chili powder
- 1 cup milk
- 8 oz freshly grated mild cheddar cheese
- juice of 1 lime
- 1 Roma tomato, diced
- handful cilantro, chopped
- salt & pepper to taste
- Taco Bell sauce

been loving this one pot creamy salmon orzo for a quick & easy weeknight meal🧀🌿✨

Ingredients:
- 3-4 tbsp butter
- 1 shallot, finely diced
- 3-4 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, finely chopped
- 2 cups orzo
- 4 cups chicken broth
- 1 block @Boursin Cheese 
- salmon filets, skin off & seasoned generously with salt, pepper, onion powder, garlic powder, paprika

cover and bake at 425°F for 10 minutes. remove, stir and add:
- 1/4 cup heavy cream
- 1/4 cups capers
- salt & pepper to taste

cover and bake an additional 5-7 minutes. remove and stir in:
- 2-3 large handfuls spinach
- juice 1/2 lemon
- 1/3 cup freshly grated Parmesan (save some to top!)

Ingredients:
- 1 large spaghetti squash, cut in half and remove seeds (rub with olive oil and sprinkle with salt & pepper)
*bake at 400°F for about 40 minutes

pesto:
- 1/3 cup olive oil
- 3 cloves garlic
- 1/4 cup pine nuts
- juice of 1 large lemon
- about 1/2 cup fresh basil
