Freezer Breakfast Burritos

Ingredients

* 8 flour tortillas
* 6 eggs, scrambled
* 6 pre-cooked sausage links (such as Jimmy Dean)
* 5 small baby red potatoes
* 5 oz sharp cheddar cheese, shredded
* 2 tbsp butter
* Salt, pepper, and garlic powder to taste

Directions

1. Using the rotary grater, shred:
* Potatoes
* Sausage links
* Cheddar cheese
2. Whisk the eggs in a bowl and set aside.
3. Melt 2 tbsp butter in a large skillet over medium heat.
4. Add shredded potatoes.
* Season with salt, pepper, and garlic powder.
* Cook 8–10 minutes, stirring occasionally, until tender.
5. Add shredded sausage and cook 2–3 minutes to warm through.
6. Pour in scrambled eggs and cook until just set.
7. Add shredded cheddar cheese and stir until melted.
8. Divide filling among 8 tortillas.
9. Roll burritos tightly.
10. Heat a small amount of oil in a skillet and lightly brown each burrito on both sides.
11. Let cool completely.
12. Wrap each burrito in parchment paper.
13. Place in a freezer-safe zip-top bag and freeze.

* Freeze for up to 3 months for best quality.
* They are generally safe longer if continuously frozen, but flavor and texture are best within 3 months.

🔥 Reheating

1. Move a burrito from freezer to refrigerator the night before.

30-Minute Cheesy Chicken Enchiladas ✨

This easy weeknight dinner came together in no time thanks to my favorite rotary shredder! I used it to shred both the rotisserie chicken and the cheese, and my spoonula made serving these cheesy enchiladas so easy.

🧀 Recipe:
• 1 rotisserie chicken, shredded
• 8 oz sharp cheddar cheese, shredded
• 8 oz white cheddar cheese, shredded
• 1 bottle green taco sauce
• 5 large tortilla shells

Directions:

1. Mix the shredded chicken, half the cheese, and about ½ bottle of taco sauce in a bowl.
2. Fill and roll the tortillas and place them in a 9x13 baking dish.
3. Top with the remaining taco sauce and the rest of the cheese.
4. Bake at 375°F for 15–20 minutes, or until hot and bubbly.

These Slow Cooker Shredded Beef Taquitos are inspired by a favorite from Alvera Street in Downtown Los Angeles—and they turned out absolutely incredible. 🌮✨

Tender chuck roast slow-cooked until fall-apart juicy, rolled into crispy golden taquitos and served with a fresh avocado-tomatillo sauce. The best part? The slow cooker does most of the work for you.

Slow Cooker Shredded Beef Taquitos with Avocado Sauce

Beef:
• 2 lbs boneless chuck roast
• 1 tbsp whole peppercorns
• 2 tbsp salt
• 2 bay leaves
• 2 garlic cloves

Place beef, seasonings, and enough water to cover in a slow cooker. Cook on low for 8-10 hours, shred, and set aside.

Avocado Sauce:
• 6 tomatillos (chopped)
• 3 yellow chilies
• 2 garlic cloves
• 1/3 cup cilantro
• 1 tsp salt

Boil all ingredients in 1.5 quarts water for 5 minutes. Blend with reserved cooking water until smooth. Chill.

Taquitos:
Warm tortillas, fill with shredded beef, roll, and secure with toothpicks. Fry in oil until golden. Serve with avocado sauce!

The sweet potatoes were par-boiled, brushed with a honey butter glaze, sprinkled with flaky sea salt, and grilled until caramelized. The salmon stayed tender and flaky with fresh lemon slices on top. This might be my new favorite summer dinner! ☀️🍋🍠🐟

Our backyard Italian cookout needed something fresh, easy, and SO good… and this pesto pasta salad disappeared fast 🍅🌿✨

This is one of those recipes that feels fancy but takes almost no effort. Perfect for summer dinners outdoors, cookouts with family, or keeping in the fridge for a quick lunch the next day. And honestly… the leftovers might be even better warmed up as a cozy baked pasta dish later 🤍

Recipe:
• 1 lb cooked spiral pasta, cooled
• 1 package grape tomatoes, halved
• 8 oz marinated mozzarella balls
• About 2 cups homemade or jarred pesto

Add everything to a large bowl and mix until the pasta is fully coated in pesto. Garnish with fresh flat leaf parsley and basil, then chill for about 20 minutes before serving.

And don’t throw out the leftovers… warm them up later for an easy hot pesto pasta with melty mozzarella 😍

Italian-style summer grilling just got SO much easier 🍋🔥🍤

I tossed shrimp, sausage, baby potatoes, sweet onion, and corn riblets with olive oil, lemon juice, Italian seasoning, Santa Maria seasoning, garlic powder, salt & pepper… then grilled everything together in these amazing hexagon grill baskets beside A5 Wagyu steaks and honestly the flavor was incredible.

The baskets make it so easy to cook everything evenly without losing food through the grill — and the screw-on handles are such a game changer for flipping and serving.
