Sunday’s are for pasta 🍝🥖 It officially feels like summer and lemon pasta is one of my faves for the warm summer months 👌🏻 Definitely a crowd pleaser around here!

Bread
Ingredients
• 3 cups of bread flour
• 2 1/4 tsp of yeast
• 2 tsps of Himalayan pink salt
• 1 1/2 cups of lukewarm water (microwave 45 seconds)

Directions
• Combine all dry ingredients then add water
• Cover with plastic wrap & a towel for two hours
• Flip & fold then let rest. Repeat 2- 3 times during the next hour
• Heat oven to 450 degrees with dutch oven inside. Sprinkle bottom with flour, add dough and then sprinkle flour on top. Add a small slice on top.
• Bake 25 mins with lid on, then remove lid and bake another 10 minutes with lid off and drop temp to 400 degrees. Let cool, slice and enjoy!

Pasta
Ingredients
• 1 lb of pasta
• 1/4 olive oil
• 3 garlic cloves, minced
• 3 tablespoons of fresh parsley chopped
• 1 tablespoons of lemon zest
• 3 tablespoons of lemon juice
• 1/4 teaspoon of salt
• 1/3 cup of grated Parmesan
• black pepper

Directions
• bring a big pot of salted water to a boil. Add pasta until al dente about 8-10 minutes. Before draining be sure to reserve a 1/2 cup of the water for the sauce
• In a saucepan, heat 1/4 cup of olive oil over medium heat. Add minced garlic and parsley. Saute until garlic is golden brown
• Remove skillet from heat and add lemon zest, lemon juice and salt. Then add the reserved water and bring skillet back to medium- low heat.
• Add the pasta to the skillet, using tongs toss the pasta so that it’s completely covered in the sauce. Cook for about a minute
• Turn the heat off and add grated Parmesan, toss pasta again.
• transfer pasta to a serving bowl, garnish with parsley and enjoy!

Another crockpot recipe to save the day! I always struggle with being able to cook dinner and be outside with the kids while they’re playing. Which is why I love the crockpot ❤️ While we were outside playing after school the crockpot was making our dinner and when we were done we came inside to a hot meal 👍🏼 Another easy and delicious one for ya! Save this recipe to give it a try😋

Ingredients
• 1 lb of ground beef
• 1 onion diced
• 3 bell peppers, any color chopped
• 3 garlic cloves, minced
• 1 can of diced tomatoes (14.5 oz)
• 1 can of tomato sauce (8 oz)
• 1 cup of vegetable broth
• 1 cup of uncooked rice
• 1 Tbsp of Italian seasoning
• salt to taste
• black pepper to taste
• 1 cup of shredded mozzarella cheese

Directions
1. In a skillet over medium heat, add ground beef and diced onion until browned
2. When done add to the crockpot, then add bell peppers, minced garlic, diced tomatoes and tomato sauce. Stir everything together.
3. Pour in broth and uncooked rice, Italian seasoning, salt & pepper. Stir again.
4. Cover crockpot and set to cook 6-7 hours on low or 3-4 hours on high.
5. 15 minutes before serving sprinkle mozzarella cheese on top cover again and let melt.
