Burrata ravioli 💛

I still remember the first time I tried burrata and it was love at first sight. This meal has only 5 components and is such an easy weeknight or weekend summer meal 🍽️ love this one!

2 packages of ravioli, around 17 oz/500g. Whatever flavor you like! 
1 cup of chicken broth. Don’t add too much, the ravioli is already soft.
1 pint cherry tomatoes 🍅 
1 ball of burrata cheese 🧀
Olive oil 

1. Add ravioli to oven oven safe tray, pour over broth and add cherry tomatoes. Break open burrata cheese and place on top. Add salt and pepper.
2. Bake in oven for about 20-30 minutes, at 375F, until pasta is al dente and tomatoes are starting to burst. Alternatively if you want your tomatoes to be more saucy you can bake these in the oven 15 minutes prior to adding the burrata. Remove from oven and drizzle with olive oil, mix and serve.
Loving quick dinners with little prep time and little clean up! As you might know I’m obsessed with the Trader Joe’s spinach and artichoke dip and it makes this dinner super creamy! Let me know if you try it :)

2 packages rice and orzo pilaf @traderjoes 
1 package/12 oz cheddar chicken sausage 
6 oz baby spinach
1 spinach and artichoke dip
2.5 cups chicken broth
1/4 cup sour cream, optional

1. Place pilaf, chicken sausage, spinach, dip in a large Dutch oven or a deep baking dish. Cover with broth.

2. Bake in oven for about 50 minutes to an hour at 400F. Remove from oven and mix. Add some sour cream and combine.
A dinner that literally takes 5 min prep? Sign me up. Adding bone broth to dish is also such a hack, it elevates the flavors and turns this bow-tie beauty into a rich, savory winner winner chicken dinner 🥇 also packs protein and is rich in collagen and amino acids! 

1 lbs pasta, I used farfalle
1 pint cherry tomatoes
12 oz/340 g chicken sausage, I used sweet Italian
5 oz/150g garlic and herb cheese spread 🧄 
3 sticks (48g) bone broth powder, savory chicken 
4 cups water
1 tbsp minced garlic
1/2 cup sour cream
1/4 cup Parmesan cheese

1. Add dry pasta, sliced sausage, cherry tomatoes and cheese to an oven safe tray. 

2. Mix bone broth with water, and pour over dish. Add garlic. Bake in oven at 400F for 45 minutes - 1 hour. Pasta is done when it’s al dente.

3. Remove from oven, mix to combine, add parmesan cheese and sour cream. Mix again 🍽️
Okayyy stop what you’re doing and make this as soon as possible. The combination of honey, goat cheese and tomatoes makes this absolutely dreamy and a winner meal! 🥇

1 package, 20 oz (567g) tortellini - whatever filling you like. I used this herb chicken one from @aldiusa 
8 oz (226g) sub-dried tomatoes 
1 pint (10 oz/300g) cherry tomatoes 
3 cups chicken broth
10 oz (280g) goat cheese 
Hot honey @zabs 
Optional: parmesan cheese for serving

1. Add all ingredients to an oven safe baking pan. Bake in the oven for about 45 minutes at 400F until the majority of the liquid has been absorbed. Remove from oven and mix and serve with some Parmesan cheese 🧀 

Note: - if you feel that the dish is too watery but tortellini and cheese is starting to burn, cover with foil and cook for a bit longer.
Spinach and artichoke orzo dinner 🥘 

Both my kids loved this and so will you since it’s one tray dinner that literally takes 5 minutes of prep. The oven will make this into the creamiest yummiest dinner you’ll have all week!

1 lbs orzo pasta
12 oz chicken sausage (I LOVE this cheddar one from Trader Joe’s)
1 cup baby spinach
1.5 cup cherry tomatoes 
1 spinach and artichoke dip from @traderjoes or wherever you can find one. Room temperature. You can place the dip in the fridge overnight or for a couple of hours. 
3 cups chicken or vegetables broth

1. Add orzo, chicken sausage, tomatoes and spinach to an oven safe tray. Place dip in the middle, cover with broth and drizzle with olive oil (optional). Add salt and pepper.

2. Bake in oven at 375F for about 30 minutes until pasta is al dente. Remove from oven, mix everything and serve!

This creamy Boursin chicken and rice bake is the easiest meal you’ll make this week. Just add everything to a Dutch oven (or oven safe tray + foil). No stress here just creamy and cheesy! ✨ 

1 cup basmati or jasmine rice
2 cups shredded chicken
1 cup cherry tomatoes 
1 cup arugula
2-3 tbsp of chili crisp, depending on how much spice you like
1/2 lemon 
2 and 1/4 cups chicken broth
1 Boursin cheese, shallot and chives
1/4 cup shredded Parmesan 

1. Add washed and rinsed rice, along with tomatoes, chicken and arugula to a large oven save pot. Add chili crisp, squeeze the lemon, and cover with broth. Finally top with Boursin cheese

2. Bake in oven with lid at 375F for 35-40 minutes until liquid is absorbed and rice is tender.

3. Remove from oven and stir, let sit for 5-10 minutes to let everything settle. Add Parmesan and mix.
