I was asked to bring this to thanksgiving, I don’t think I have made this since the last time I was requested to bring it 🙃 The kids love it, but we have moved onto just loving plain Mac and cheese that I make.

I made a double batch in this, but here is the recipe.

Ingredients:
1 cup elbow noodles
1 can corn, drained
1 can creamed corn
1 stick of butter
8oz velveeta cheese diced up

Instructions:
Cook pasta halfway, add to crockpot. Add all of the corn, butter, and cheese to it. Mix it up well. Cook on high for 2 hours and stir occasionally.

This was a hit for our whole family! A quick and easy one too!

Ingredients:

Caprese Salad

Ingredients:
For the marinade:

When I had planned to tator tot casserole and didn’t have tator tots 🤦🏻‍♀️ I scrounged the pantry and made something quick. The kids actually enjoyed it and it wasn’t too bad. Next time I would make it with beef broth, but I also didn’t have that on hand.

Ingredients:
1 lb ground beef, browned
4 cloves of garlic, minced
2 tablespoons butter
1 tsp Italian seasoning
2 cans of chicken broth
1/2 pound noodles
Grated Parmesan cheese

Instructions:
Brown the beef, once browned add butter and garlic, add seasoning and chicken broth. Let simmer then add noodles and cover and cook until done. Then add cheese and mix until combined.

The kids loved these, they weren’t too bad something different!

Ingredients:
- 6 6-inch flour tortillas (or corn tortillas, warmed)
- 1 pound ground beef
- ½ cup onion, chopped
- 1-2 Tablespoons taco seasoning
- Salt and pepper, to taste
- ¼ cup salsa
- ½ cup shredded cheddar cheese

Instructions:
1. Preheat oven to 400°F and line a baking sheet with foil or parchment paper.
2. In a medium-sized skillet, brown 1 pound ground beef and ½ cup chopped onion over medium-high heat. Season with salt and pepper.
3. Drain fat from beef and add 1-2 Tablespoons taco seasoning and ¼ cup salsa. Season to taste.
4. Spray or brush olive oil on both sides of the tortillas and place on prepared baking sheet.
5. Put ¼ cup taco meat and 1 Tablespoon cheese on each tortilla. Fold tortillas in half.
6. Bake tacos for 10 minutes. Flip with a spatula and bake another 5-10 minutes, or until crispy. You can also add cheese to the top after flipping.
7. Serve with pico de gallo, guacamole, or salsa for dipping or spreading on top.

I made snicker apple salad for thanksgiving, I haven’t made it in a long time!

Little tip…the more snickers you add the better it is 😉

Ingredients
1 (8oz) cool whip
4 Granny Smith apples peeled and diced or just diced up
4 snicker candy bars, chunked in small pieces
1 small box instant French vanilla pudding
1 cup milk

Instructions
Mix together pudding and milk and then add the rest of the ingredients, adding apples right before serving. You can soak apples in cold water to prevent browning once diced.

A new recipe for us and we loved it! Threw it all into a crockpot and forgot about it.

Ingredients:
- 3-4 lbs beef chuck roast
- 16 ounce bottle BBQ Sauce (your favorite kind, e.g., Stubbs or Lillie’s Q)
- 2 tablespoon dijon mustard
- 2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon ground black pepper

Instructions:
1. Place chuck roast in a large slow cooker.
2. In a bowl, whisk together the BBQ sauce, dijon mustard, smoked paprika, garlic powder, onion powder, salt, and pepper.
3. Pour the mixture over the beef in the slow cooker.
4. Cook on high for 4-5 hours, or low for 7-8 hours, until the beef shreds easily. If your chuck roast is frozen, add 1 hour to the cooking time.
5. Shred the beef and return it to the slow cooker with the BBQ sauce.
6. Cook on high for an additional 30 minutes. This step is optional but allows the sauce to cook down a little more.
7. Serve the BBQ beef on buns topped with coleslaw and pickles, or as a main dish with rice or mashed potatoes.

Veggie pizza dip is my newest favorite dish. My kids devour it and it tastes just like the pizza!

Ingredients:
- 2 packages (8 ounces each) cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 packet ranch seasoning mix
- 3/4 cup finely chopped red bell pepper
- 3/4 cup finely chopped cauliflower
- 3/4 cup finely chopped broccoli
- 3/4 cup finely chopped carrots
- 1/4 cup finely chopped red onion
- 1 cup shredded cheddar cheese
- Bread and/or tortilla chips for serving

Instructions:
1. In a large bowl, add the cream cheese, sour cream, mayonnaise, and ranch seasoning. Mix with an electric mixer to combine.
2. Set aside about 1 1/2 cups of the vegetables. Add the rest of the vegetables and shredded cheddar cheese to the cream cheese mixture and stir to combine.
3. Add this mixture to a large shallow bowl.
4. Sprinkle the top with the reserved chopped vegetables.
5. Refrigerate for 2-3 hours or until ready to serve.
6. Serve with bread and/or tortilla chips.

I have mixed thoughts on this…some bites taste like soap, but then others are delightful 🤷🏻‍♀️ but that pop is satisfying.

Ingredients
• 12 oz bag of fresh cranberries
• 1 small bottle (8 oz) or a can of Sprite
• 1 small can (6 oz) of pineapple juice
• Approximately 2 cups of powdered sugar (adjust as needed for full coating)

Instructions
1. Place the cranberries in a large bowl and pour in the Sprite and pineapple juice. Cover the bowl, gently shake to mix, and refrigerate overnight to let the flavors infuse.
2. Drain the cranberries, reserving the juice for a cocktail or mocktail. Transfer the cranberries to a large zip-top bag and add powdered sugar, shaking gently until the cranberries are fully coated.
3. Preheat the oven to 200°F. Line a baking sheet with parchment paper and spread the coated cranberries in a single layer on the sheet.
4. Place the baking sheet in the oven for 5-7 minutes to dry the cranberries. Allow them to cool completely, then store them in an airtight container in the fridge or a cool, dark pantry for up to one week.

We need the easiest meals on Monday nights, the boy’s have wrestling practice. When they get home make supper while they shower.

Ingredients (Makes 12 sliders)
For the Sliders:
- 1 lb lean ground beef
- 1 small yellow onion, finely diced
- 1 tsp garlic powder
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 12 slider buns (soft dinner rolls or Hawaiian-style rolls)

For the Cheese and Toppings:
- 12 slices cheddar cheese or any kid-friendly melty cheese
- Optional: pickles, ketchup, mustard, burger sauce

For the Topping:
- 2 tbsp melted butter
- 1 tsp sesame seeds (optional, for visual appeal)
