making the viral sweet chili chicken crispy rice salad 🥗 OMG this was so good, 10/10 highly recommend! I used lightly breaded chicken chunks for this. 440 cal, 10g protein, 10g fiber. Makes 6 servings.

You’ll need 1-2 cucumbers, 1 bag edamame, 1/4 cup chopped green onion, 2 avocado cubed. Cook 1/2c white rice, cool and stir in 1tbsp sesame oil, 2 tbsp soy sauce, 1 tbsp chili oil. Spread on baking sheet and bake at 400 degrees Fahrenheit for approximately 40 min, flip every so often. Keep and eye on it, every oven is different. Dressing is 1/4c nonfat Greek yogurt, 1/4c mayo, 1/4c sweet chili sauce, 1/2tsp paprika, 1/2tsp garlic powder, pinch of salt and lime juice. Assemble and enjoy.

Todays lunch is 🍓 strawbs, raspberries, and pineapple 🍍, along with rice 🍚, and a power veggie blend from @Costco Wholesale (kale, chickpeas, Lima beans, Brussels sprouts, broccoli, chicken) with lemon 🍋 juice. A @Diet Coke, string cheese, and @Premier Protein cookie dough shake (love these). All packed up in the @YETI daytrip 6L in cherry blossom. 🌸

🍓🍊🍍🫐 what I’m packing for lunch as someone who prioritizes healthy eating. it’s important to me to stay fueled through my work days with food that is not going to slow me down. Today’s lunch is fruit salad and homemade *healthier* broccoli cheddar soup 🥦 🧀 🫕 with a Diet Coke (one thing I can’t give up, oh well) and then Built Bar chocolate chip cookie dough protein bar for breakfast. 💪

we got 9 inches of snow at our house at the Jersey shore. ❄️ we decided to spend it making a pizza 🍕 half vodka sauce chicken cutlet, half meatball, all from scratch. ❤️ using our Halo Versa 16”, we make pizza at home all the time and it’s so easy, and always comes out perfect!!

Our engagement photo shoot came out so cute — details on the outfit!!

This dress is extremely comfortable. It has a nice stretch and flares at the waist! It’s super elegant and perfect for work parties, cold days, etc.

Tights are the best tights ever - Hanes!! They have lasted me YEARS. They have not ripped or run.

Michael Kors boots - they have a slight stretch in the calf, but I would not recommend these for wide calves. Otherwise, the leather is really nice and they look great with the gold accents.
