Pour 400 grams room temp water into bowl and add yeast. Stir in yeast until dissolved. 2. Next add flour and salt and mix until there are no flour clumps. 3. Let dough rest 5-10 minutes and then knead dough until the surface is smooth and a tight ball is formed. 4. Let dough rest 1.5-2 hours and then scale into 3 equal pieces and shape into ball forms. 5. Rest dough balls for 30 minutes. Make the pizzetta: 1. Preheat oven to 500 degrees 2. Hand stretch or roll out dough to form an irregular oval shape 3. Spread olive oil on top and place in over for 8-10 minutes 4. Remove from oven and begin to place your toppings – Spread cheese sauce, add chicken tinga, roasted corn 5. Place back into oven for 5-10 minutes 6. Take out of oven and top with pickled onions, drizzle with avocado crema, sprinkle with fresh cilantro and cotija cheese 7. Cut into pieces and enjoy! 2d
