Did you know that quesadillas can be made with either corn or flour tortillas? Masienda makes my favorite masa harina, so I was excited when they asked me to stop by the frozen foods isle at Whole Foods and pick up their new quesadillas which are made with corn masa, not wheat flour, so they're gluten free… and exceptionally tasty.

If you’ve seen the Mexican cheese section in my Taste of Tucson cookbook, you know that Oaxaca has a buttery flavor and a texture similar to string cheese. It’s also super stretchy when it melts. I tried all three varieties, cheese, chicken tinga, and beef birria and I had a lot of fun playing around with the novelty-level cheese pull for these photos.

Chicken Tinga Pizzetta Recipe

INGREDIENTS-

Dough:

500 grams flour

400 grams water

6 grams yeast

12 grams salt

Pizzetta Toppings:

Cheese Sauce

Chicken Tinga

Roasted Corn

Pickled Onions

Avocado Crema

Cotija Cheese

STEPS-

Make the dough:

1. Pour 400 grams room temp water into bowl and add yeast. Stir in yeast until dissolved.

2. Next add flour and salt and mix until there are no flour clumps.

3. Let dough rest 5-10 minutes and then knead dough until the surface is smooth and a tight ball is formed.

4. Let dough rest 1.5-2 hours and then scale into 3 equal pieces and shape into ball forms.

5. Rest dough balls for 30 minutes.

Make the pizzetta:

1. Preheat oven to 500 degrees

2. Hand stretch or roll out dough to form an irregular oval shape

3. Spread olive oil on top and place in over for 8-10 minutes

4. Remove from oven and begin to place your toppings – Spread cheese sauce, add chicken tinga, roasted corn

5. Place back into oven for 5-10 minutes

6. Take out of oven and top with pickled onions, drizzle with avocado crema, sprinkle with fresh cilantro and cotija cheese

7. Cut into pieces and enjoy!
