Bringing you a mid week dose of reality and what dinner in my house looks like most nights. I really struggle with meal prep, mainly because I don’t love leftovers. I also don’t like not having options or being stuck to a meal plan I thought of four days ago that no longer appeals. Throwing together a quick and healthy meal like this without much thought or stress isn’t early from the jump. Three years ago I would have never even thought to make dinner like this when it had been a long day. And if I didn’t have a dinner plan? Takeout was always going to be the answer. Making healthy choices on a regular basis has been a long time coming, and it is going to take even more time to solidify for good. Just here to encourage you to keep choosing yourself. One day at a time. Even when it’s hard, uncomfortable, or takes more effort than you’re used to. It does get easier. It does become habit. You can make changes and stick to them.
