Soft Mini Gingerbread Cookies

Ingredients
	•	3 cups all-purpose flour (spooned & leveled)
	•	2 tsp ground ginger
	•	1 ½ tsp cinnamon
	•	½ tsp nutmeg
	•	¼ tsp cloves
	•	½ tsp salt
	•	¾ tsp baking soda
	•	¾ cup unsalted butter, softened
	•	½ cup packed dark brown sugar
	•	⅔ cup unsulfured molasses
	•	1 large egg
	•	1 tsp pure vanilla extract

Instructions
	1.	Whisk dry ingredients
In a medium bowl, whisk together flour, ginger, cinnamon, nutmeg, cloves, salt, and baking soda. Set aside.
	2.	Cream butter + sugar
In a large bowl, beat butter and brown sugar until light and fluffy (about 2 minutes). Mix in molasses, egg, and vanilla until smooth.
	3.	Combine + chill
Add dry ingredients gradually, mixing just until combined. Dough should be soft but not sticky — if it feels tacky, add 1–2 tbsp more flour.
Divide in half, flatten into discs, wrap in plastic wrap, and chill for at least 1 hour (or up to overnight).
This helps prevent crumbly edges when rolling!
	4.	Roll out
Roll dough on a lightly floured surface to ¼ inch thickness for soft cookies or ⅛ inch for crisp ones. For minis, stick with ¼ inch — it keeps them tender inside.
	5.	Cut + bake
Use small cookie cutters (1–2 inch size). Place on parchment-lined baking sheets about 1 inch apart.
Bake at 350°F (175°C) for 7–9 minutes until edges are just set — don’t overbake!
	6.	Cool + decorate
Let cookies rest on the sheet 5 minutes before moving to a rack. Once cooled, decorate or thread ribbon through if hanging on the tree.

	•	1 orange, sliced
	•	1 apple, sliced
	•	3–4 whole cloves
	•	2–3 cinnamon sticks
	•	1 small sprig fresh rosemary
	•	1 tsp vanilla extract

Directions:
	1.	Fill a small pot or heat-safe dish with 2–3 cups of water.
	2.	Add orange slices, apple slices, cloves, cinnamon sticks, rosemary, and vanilla.
	3.	Place on your warmer lamp and let it gently heat.
	4.	Refill with water as needed so it doesn’t dry out.

🍂 Homemade Cozy Cinnamon Rolls
Dough (Bobby Flay’s Pizza Dough)
* 3 ½–4 cups bread flour
* 1 tsp sugar
* 1 packet (2 ¼ tsp) instant yeast
* 2 tsp kosher salt
* 1 ½ cups warm water (110°F)
* 2 tbsp olive oil
👉 Mix flour, sugar, yeast + salt. Stir in warm water + oil. Knead 8–10 min until smooth. Let rise 1 hr until doubled.

Filling
* ½ cup (1 stick) butter, softened
* 1 cup brown sugar
* 2 tbsp cinnamon
👉 Roll out dough, spread with butter, sprinkle with sugar + cinnamon. Slice into strips, roll up, and place in a greased square pan. Pour ½ cup heavy cream over the rolls.

Bake
* Bake @ 350°F for 25–30 min, until golden + fluffy.

Frosting
* 1 stick butter, softened
* 1 (8 oz) cream cheese block, softened
* 2 cups powdered sugar
👉 Beat butter + cream cheese until smooth. Add powdered sugar until fluffy. Spread over warm rolls.

✨ Soft, gooey, melt-in-your-mouth cozy cinnamon rolls. Perfect for chilly mornings.

✅ Fermented Boiled Rice Water with Orange Peel & Rosemary Oil
Ingredients
* ½ cup uncooked rice
* 3 cups water
* Peel from ½ an orange
* 3–4 drops rosemary essential oil
* Optional: 1 tsp raw rice grains or ½ tsp sugar (for faster fermentation)

Instructions
1. Boil & Extract Nutrients
    * Rinse rice well.
    * Boil in 3 cups of water for 10–15 minutes until the water looks starchy.
    * Strain and keep the liquid; let it cool completely.
2. Prepare for Fermentation
    * Pour cooled rice water into a clean glass jar.
    * Add orange peel for Vitamin C and fragrance.
3. Speed-Up Trick (Optional but Recommended)
    * Add 1 tsp raw rice grains OR ½ tsp sugar.
    * These act as a fermentation starter because boiling kills most microbes.
4. Ferment
    * Cover the jar loosely (so gases can escape).
    * Leave at room temperature for 24–48 hours (up to 72 if your room is cool).
    * When it smells slightly sour (not rotten), it’s ready.
5. Add Rosemary Oil & Store
    * After fermentation, strain out orange peel and any raw rice grains.
    * Add 3–4 drops of rosemary essential oil.
    * Store in the fridge for up to 7 days.

How to Clean & Protect Stainless Steel with Dish Soap + Oil
	1.	Clean the surface:
	•	Dampen a soft cloth with warm water.
	•	Add a small drop of Dawn dish soap to the cloth.
	•	Wipe the stainless steel thoroughly to remove fingerprints, grease, and smudges.
	2.	Rinse & dry:
	•	Wipe again with a clean damp cloth to remove any soap residue.
	•	Dry completely with a microfiber cloth to prevent water spots.
	3.	Protect with oil:
	•	Put a few drops of baby oil or olive oil on a clean microfiber cloth (don’t apply directly to the steel).
	•	Gently buff the oil into the surface, following the direction of the grain.
	4.	Wipe away excess:
	•	Use a dry section of the cloth to remove any extra oil so it’s smooth, not greasy.

Deconstructed Spicy Salmon Sushi Rolls (aka Spicy Salmon Rice Bowls)
Serves 2

Ingredients:

8 oz salmon (seasoned with salt & pepper)
1 cup cooked rice
1 avocado, sliced
⅓ cucumber, thinly sliced
¼ cup scallions, chopped
1 bunch cilantro, roughly chopped
2 tbsp sesame seeds
Soy glaze:

¼ cup soy sauce
2 tbsp honey
1 tsp chili flakes
1 tbsp sesame oil
1 tbsp rice wine vinegar
Spicy mayo:

½ cup mayo
¼ cup sriracha (adjust to taste)
Instructions:

Cook the salmon in a skillet over medium heat until crispy and cooked through. Set aside.
In a small saucepan, combine soy sauce, honey, chili flakes, sesame oil, and vinegar. Simmer until slightly thickened.
Drizzle glaze over the cooked salmon.
Assemble your bowls: rice on the bottom, then layer with salmon, avocado, cucumber, scallions, cilantro, and sesame seeds.
Top with spicy mayo and an extra drizzle of soy glaze if desired.

Ingredients:
For the Dough:
	•	2 ½ cups all-purpose flour
	•	1 tsp active dry yeast
	•	1 tsp sugar
	•	¾ cup warm water (about 110°F)
	•	2 tbsp olive oil
	•	½ tsp salt
For the Filling (goes in raw):
	•	1 lb ground beef
	•	½ lb ground sausage (mild)
	•	1 medium onion, finely minced
	•	1 green bell pepper, finely minced
	•	1 red bell pepper, finely minced
	•	2 tbsp tomato paste
	•	2 tbsp olive oil
	•	1 ½ tsp ground cumin
	•	1 tsp paprika (sweet or smoked)
	•	1 tsp red pepper flakes 
	•	½ tsp ground black pepper
	•	½ tsp salt
	•	1 tsp dried oregano or thyme (optional)
Topping (Optional):
	•	Shredded mozzarella
🥣 Instructions
1. Make the Dough:
	1.	In a bowl, mix warm water, yeast, and sugar. Let sit 5–10 minutes until frothy.
	2.	Add flour, salt, and olive oil. Mix and knead into a soft dough (8–10 minutes).
	3.	Cover and let rise in a warm spot for about 1 hour, or until doubled.
2. Mix the Raw Filling:
	1.	In a large bowl, combine ground beef, ground sausage, minced onion, peppers, tomato paste, olive oil, and all spices.
	2.	Mix thoroughly with your hands until evenly combined. Set aside.

3. Assemble the Pide 
	1.	Preheat your oven to 475°F (245°C). Line a baking sheet with parchment paper.
	2.	Punch down the dough and divide into 2 to 4 equal pieces.
	3.	Roll each piece into a thin oval  (~¼ inch thick).
	4.	Spoon the raw meat mixture thinly and evenly onto the dough, leaving about 1 inch of border all around. Don’t overload it—thin is key for even cooking.
	5.	Fold in the sides pushing the dough through your pointer and middle finger.
4. Bake:
•	Bake in the preheated 475°F oven for 12–15 minutes, until the crust is golden and the meat is fully cooked.
🥄 Serve:
Slice hot and enjoy with a side of garlic yogurt, lemon wedges, or fresh herbs.
✅ Tip: Because the meat is raw going into the oven, make sure it’s spread in a thin layer to cook thoroughly.
