Made a spring reading list, in that quiet optimistic week when you forget what the season ahead really looks like with school aged kids in the house😅

The Rites of the Starling just came out and I finally had some time to fly through the first few chapters. Great storytelling. If you haven’t read the first book in the series, A Shield of Sparrows, it’s the perfect intro to fantasy/romantacy genre.

The Nightingale has been on my list for ages- historical fiction, I keep hearing it wrecks you, which sounds like a perfect read for those moody rainy spring days.

I’m almost through A Court of Wings and Ruin and need to finish the whole series before book six drops in October, so no pressure there. 🧚‍♂️

Blood & Roses by Callie Hart this was a total impulse buy on the ferry and really have no idea what I’m getting into but have heard great things about her writing💛

And Our Perfect Storm by Carley Fortune, out May 5th, which might be the only book on this list I actually finish quickly because it’s Carley Fortune and Tofino, and I just know I’m going to love it.

Yesterday I sat by the window with a coffee that stayed hot the whole time. Fifteen minutes. It was so good …..I’m a little afraid it won’t happen again for a while.

After my first loaf, I honestly thought about quitting my bread journey.
Learning sourdough as a beginner to bread, but not baking, has been humbling.�There’s so much about sourdough starter timing, bulk fermentation, stretch and folds, and patience that no one really talks about.
I’m realizing it’s less about baking perfect bread…�and more about learning the art of patience, and trying again.

A kid-approved, make-ahead school breakfast that actually gets eaten. 🙌

My kids kept asking for store-bought muffins, so I started making these once a week instead, as I wanted something more substantial and with more nutrients. These disappear every time.

Soft, cozy, freezer-friendly, and perfect for busy school mornings.

🍪Mom Swap Chocolate Chip Breakfast Muffins (healthier, gluten-free and Kid-Approved)

Ingredients

Dry
2 cups oat flour
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt

Wet
2 ripe bananas, mashed (or ½ cup applesauce)
⅓ cup maple syrup
¼ cup melted coconut oil or avocado oil
2 eggs
1 tsp vanilla extract
¼ cup milk (dairy or non-dairy)
Mix-ins
½ cup chocolate chips

👩‍🍳 Instructions
Preheat oven to 350°F (175°C). Line a muffin tin.
In a large bowl, whisk dry ingredients.

In another bowl, mix wet ingredients until smooth.
Pour wet into dry and gently stir until just combined.
Fold in chocolate chips.
Scoop into muffin liners (¾ full).
Bake 18–22 minutes until tops are set and a toothpick comes out clean.
Cool 10 minutes (they get even better as they set).

These have made our school mornings easier. The problem is that my kids want to eat them before school week starts, so I have to freeze them fast.🤣
