Preheat oven to 400°F. 2. Cut squash in half lengthwise and scoop out seeds. 3. Drizzle with olive oil, @sauce salt, garlic powder and pepper. 4. Roast cut-side down on a baking sheet for 35–45 minutes. 5. Once tender, use a fork to shred into “noodles.” Set aside. Step 2: Cook the Sausage & Shrimp 1. Heat a large skillet over medium heat. 2. Add sliced sausage and cook until browned and slightly crispy. Remove and set aside. 3. Season shrimp with Cajun seasoning, and garlic powder. 4. In the same skillet, cook shrimp 1–2 minutes per side until pink. 5. Remove and set aside with sausage. Step 3: Make the Cajun Alfredo Sauce 1. In the same pan, melt butter. 2. Add garlic and sauté until fragrant. 3. Pour in heavy cream and simmer 3–4 minutes. 4. Stir in Parmesan, mozzarella (if using), Cajun seasoning, Italian seasoning and optional red pepper flakes. 5. Let it thicken until silky and rich. 6. Taste and adjust salt or spice. Step 4: Bring It All Together 1. Add shrimp and sausage back into the sauce. 2. Gently fold in spaghetti squash noodles. 3. Let everything simmer together 2–3 minutes so the flavors marry.
