Another low carb high protein recipe!! Cajun Seafood Alfredo made with spaghetti squash!! Save and Screenshot below for recipe!!

Step 1: Roast the Spaghetti Squash
1. Preheat oven to 400°F.
2. Cut squash in half lengthwise and scoop out seeds.
3. Drizzle with olive oil, @sauce salt, garlic powder and pepper.
4. Roast cut-side down on a baking sheet for 35–45 minutes.
5. Once tender, use a fork to shred into “noodles.”
Set aside.

Step 2: Cook the Sausage & Shrimp
1. Heat a large skillet over medium heat.
2. Add sliced sausage and cook until browned and slightly crispy. Remove and set aside.
3. Season shrimp with Cajun seasoning, and garlic powder.
4. In the same skillet, cook shrimp 1–2 minutes per side until pink.
5. Remove and set aside with sausage.

Step 3: Make the Cajun Alfredo Sauce
1. In the same pan, melt butter.
2. Add garlic and sauté until fragrant.
3. Pour in heavy cream and simmer 3–4 minutes.
4. Stir in Parmesan, mozzarella (if using), Cajun seasoning, Italian seasoning and optional red pepper flakes.
5. Let it thicken until silky and rich.
6. Taste and adjust salt or spice.

Step 4: Bring It All Together
1. Add shrimp and sausage back into the sauce.
2. Gently fold in spaghetti squash noodles.
3. Let everything simmer together 2–3 minutes so the flavors marry.

Top with:
• Extra Parmesan
• Fresh parsley
• A light sprinkle of Cajun seasoning

Taco Soup recipe

1 Diced onion
1 bag of sweet corn
2 boxes of chicken broth
3 cans of fire roasted tomatoes
3 cans of rotel tomatoes ( I like hot, but you can use mild)
3 cans of black beans
1 can of kidney beans ( optional)
I pulled rotisserie chicken
1 packets of Hot and spicy or mild) taco seasoning packets ( Old El Paso)

In a big pot add all your ingredients and boil until hot. I like to add a little Olive oil and cook onions a little first! But you don’t have to!! Enjoy!

Top with tortilla strips, sour cream, cheese and avocado

Some recipes just mean more. This taco soup was passed down from Shawnee, and it’s become one of our go-to comfort meals. Packed with flavor, low carb, keto friendly, and so simple to make. The kind of recipe you keep coming back to because everyone loves it.
