Amazon Prime Big Deal Days are here! 🛍️ So many of the outfits, shoes, jewelry and accessories you’ve seen me wearing lately are marked down for the next two days, so it’s a great time to grab anything you’ve had your eye on!

Nothing says fall quite like a hearty stew simmering on the stove! 🤎🧡 My Chicken Noodle Stew is easy enough to make on a busy weeknight and it’s one of those comforting dishes you’ll want in your rotation for all the chilly nights ahead. My favorite trick is blending the veggies right into the broth, which thickens it up naturally and gets all that delicious flavor into every single bite 😋 Check out the recipe below so you can try it out for yourself!

Chicken Noodle Stew
Ingredients
-2–3 carrots, peeled and diced
-2–3 celery stalks, diced
-2 cloves fresh garlic, minced or -½ teaspoon garlic powder
-½ medium sweet onion, diced
-2 bay leaves
-8 cups chicken broth for a thicker, stew-like consistency, or 10–12 cups for more of a soup
1 box pasta of your choice (I used ditalini)
-1 rotisserie chicken, chopped
-parmesan cheese and/or fresh parsley, for serving

Directions
-Add the carrots, celery, garlic, onion, bay leaves, and chicken broth to a large pot. Bring to a boil, then cook until the vegetables are tender.
-Remove and discard the bay leaves. Using a slotted spoon, transfer the cooked vegetables to a blender or food processor, leaving the broth in the pot.
-Add 1 cup of the broth from the pot to the vegetables and blend until smooth.
-Pour the blended vegetable mixture back into the pot with the remaining broth and stir until well combined.
-Bring the mixture back to a boil, then add the pasta. Cook according to the package directions, or until the pasta is tender.
-Stir in the chopped rotisserie chicken and cook for another few minutes, just until the chicken is warmed through.
-Spoon into bowls, top with Parmesan cheese and/or fresh parsley, and enjoy!

🎃 PUMPKIN FLUFF DIP
Ingredients:
• 1 cup canned pumpkin puree
• 1 package (3.4 oz) instant vanilla pudding mix
• 2 tsp pumpkin pie spice
• 1 container (8 oz) Cool Whip, thawed
Directions:
Mix the pumpkin puree, dry pudding mix, and pumpkin pie spice until combined, then gently fold in the Cool Whip. Refrigerate for about 30 minutes before serving with spiced wafers, graham crackers, apple slices, pretzels, or your favorite snacks!

👻 GHOSTS IN A BLANKET
Ingredients:
• Pillsbury Crescent Roll Dough
• Little Smokies sausages
Directions:
Wrap the Little Smokies in crescent dough and bake at 400°F for 10–12 minutes, or until the dough is golden and fully cooked. Let them cool for a few minutes and enjoy!

If you love French Onion Soup, wait until you try this recipe! These French Onion Soup Tart Bites have all of that savory onion and melty cheese flavor baked into the perfect little snack 🧅🧀 The best part is you only need a few ingredients to make this dish! Serve this up for game day, a fall dinner party, or even just a cozy night at home when you’re craving something warm and delicious 😋

French Onion Soup Tart Bites

Makes about 8-10 tarts
Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients
    •    1 package frozen puff pastry
    •    1 package (about 8 oz.) small pearl onions, thinly sliced
    •    2 tablespoons olive oil
    •    2 tablespoons balsamic glaze
    •    1/2 teaspoon salt
    •    1/4 teaspoon black pepper
    •    1 tablespoon fresh thyme leaves, plus more for garnish
    •    1/4 cup grated Parmesan cheese
    •    2 tablespoons butter, melted

Directions
    1    Preheat oven to 400°F and line a large sheet pan with parchment paper.
    2    Make small piles by adding a drizzle of olive oil and balsamic glaze for each tart. Sprinkle with salt, pepper, and fresh thyme, then layer a few slices of pearl onion on top. Finish each pile with a sprinkle of grated Parmesan.
    3    Cut the puff pastry into 8–10 small squares, making each piece large enough to completely cover the onion mixture. Place one piece of puff pastry over each pile and gently press down around all four edges.
    4    Brush the tops of the puff pastry with melted butter.
    5    Bake for approximately 18–20 minutes or until the puff pastry is puffed and golden brown.
    6    Let the tarts cool on the pan for a few minutes, then carefully flip each one over so the caramelized onion and Parmesan mixture is facing up.
    7    Finish with additional fresh thyme, Parmesan, or your favorite garnish and serve warm. Enjoy!

Don’t let all those fresh herbs go to waste as we head into fall 🌿 Just chop up your herbs from the garden, add them to an ice cube tray with olive oil, and pop them in the freezer for an easy way to cook with them all year long!
