🍒🍑Stone Fruit Bruschetta Recipe🍑🍒

INGREDIENTS

1 Baguette, sliced
2 yellow peaches, diced
18 cherries, pitted and quartered
8 oz burrata
4 tbsp olive oil
3 tbsp mint, ribboned
Balsamic glaze
Salt

INSTRUCTIONS

1. Preheat oven to 425 degrees F. Brush baguette slices with 2 tbsp of olive oil, sprinkle salt, and lay out on a baking sheet. Place in oven and toast for 8-10 minutes until slightly golden around the edges.

2. Dice the peaches, pit and quarter the cherries, and combine in a bowl. Drizzle remaining olive oil, sprinkle with salt, top with ribbons of mint leaves, and toss!

3. Top toasted bread with burrata, stone fruit mixture, drizzle balsamic glaze, and add salt to taste. Note that Enjoy!

Note- If I were to do it again, I would make the 1st raspberry line with both strawberries and raspberries (like the last line). It looks a little thin compared to the rest.

But otherwise, it’s a pretty easy concept. Just alternate red and white rows and then put your blackberries or blueberries into a square plate and top with cheese stars.

These are a classic with some tweaks to the Dijon sauce that takes it to the next level (note that I made a double batch of sauce in this video). The actual amounts are in the recipe on my site.

Also- I personally like it best with double the turkey and no ham, but ham & cheese is the classic (and most searched for). But feel free to omit if you don’t like ham. #AintTooProudToCheese

INGREDIENTS
 
4 cups watermelon, cubed
1 ½ cups strawberries, sliced
1 ½ cups raspberries
1 ½ cups cherries, pitted and halved
2 tbsp freshly squeezed lime juice
1 ½ tsp lime zest
2 tbsp honey
1 tbsp of fresh mint, finely chopped + more for garnish (optional)
 
INSTRUCTIONS
 
1. Layer watermelon, strawberries, raspberries, and cherries.
2. Whisk together lime juice, zest, honey, and mint, drizzle over fruit, toss, and serve right away. Note that this should be eaten the day off for maximum freshness and enjoyment.

INGREDIENTS
Pasta Salad
* Baby Arugula (one package)
* 1/2 cup Rotini pasta, cooked and drizzled with olive oil & sprinkled with salt
* 8oz Pearl mozzarella balls
* 4oz Provolone, cubed
* 6oz Salami, sliced
* 1 pint Grape tomatoes, halved
* 1/2 cup Red onion, sliced (about 1/4 an onion)
* 7oz Kalamata olives, pitted and quartered
* 1/4 cup Parsley, chopped
* 1/4 cup Basil, chopped
 
Italian Dressing
* 3/4 cup Extra virgin olive oil
* 1/4 cup Red wine vinegar
* 1 teaspoon Dijon mustard
* ½ teaspoon Dried oregano
* ½ teaspoon Salt
* ½ teaspoon Pepper
 
INSTRUCTIONS
 
1. Simply, combine all salad ingredients, top with dressing, toss, and enjoy!

INGREDIENTS 2% Milk 3 tbsp Chocolate Syrup 7 Graham Crackers ¼ cup Chocolate Chips 2 tsp Coconut oil 1 Marshmallow INSTRUCTIONS Fill ice cube containers with milk and freeze until solid. Roast marshmallow as desired Microwave chocolate chips and coconut oil in 10-second increments until melted. Crush two graham crackers into fine pieces in a plastic bag. Dip the rim a mason jar into melted chocolate and coconut oil mixture, and then dip into crushed graham crackers. Add 3 frozen cubes to a blender. Drizzle chocolate syrup and add 4 graham crackers. Pour in ⅓ cup of milk and blend until smooth. Pour milk “smoothie” into jar, top with 2 graham cracker halves and toasted marshmallow.

To make it extra festive I made feta stars. ⭐️ with the feta blocks from Trader Joe’s because they’re the perfect size (each container has 2 thin blocks). I used 2 containers and saved the leftover feta for another dish.
Using the cookie cutter takes some patience - you need to be very gentle pushing the cheese out, but it’s totally worth it!

I didn’t top with anything but you could always give a squeeze of lime or a mix of lime juice and honey.
