🎃 Vanilla Bean Pumpkin Cinnamon Rolls

Dough
* 2¼ tsp active dry yeast (1 packet)
* ¾ cup warm whole milk (105–110°F)
* 2 tbsp granulated sugar (for blooming the yeast)
* Remaining 6 tbsp granulated sugar
* ½ cup pumpkin purée
* 3 large eggs
* 1 stick (½ cup) melted butter
* ½ tbsp vanilla bean paste
* 1 tbsp vanilla extract
* ½ tsp kosher salt
* 1 tsp pumpkin pie spice
* 2¼ cups bread flour
* 2¼ cups all-purpose flour

Filling
* ½ cup softened butter
* 1 cup light brown sugar
* 2–3 tbsp pumpkin purée
* 2 tsp pumpkin pie spice
* ½ tsp cinnamon
* 2 tsp vanilla extract
* Pinch of kosher salt
*
Cream Cheese Frosting
* 8 oz cream cheese
* ½ cup softened butter
* 3 cups powdered sugar
* 2 tsp vanilla
* ½ tsp pumpkin pie spice
*
Directions
1. Bloom the yeast with the warm milk and 2 tbsp sugar for 5–10 minutes.
2. Add the remaining sugar, pumpkin, eggs, butter, vanilla bean paste, vanilla extract, salt, and pumpkin pie spice.
3. Mix in both flours and knead for 8–10 minutes.
4. Let rise until doubled (1–1½ hours).
5. Roll out, spread the filling, roll up, and cut into 9 rolls.
6. Place in a greased baking dish and pour ½ cup heavy cream around the rolls.
7. Let rise for 15 minutes.
8. Bake at 350°F for 45–50 minutes.
9. Frost while warm and enjoy!

* 2 capfuls Molina Mexican Vanilla
* Pinch of kosher salt
Instructions
1. Add all ingredients to a small saucepan.
2. Heat over medium-low heat, whisking constantly until smooth.
3. Once combined, let it gently simmer for 3–5 minutes. Do not boil.
4. Remove from the heat and let cool on the counter for 30–45 minutes.
5. Pour into a glass jar or bottle and refrigerate.
Storage
* Keeps 5–7 days in the refrigerator.
* Shake or stir before each use, as some natural separation may occur.

Recipe
🥞 2 cups Hungry Jack Complete Pancake & Waffle Mix
🥛 1¼ cups whole milk
🥚 1 egg
🧈 2 tbsp melted butter
🥄 2 tbsp dry milk powder
🥄 1 tbsp sweetened condensed milk
🍦 1 tsp vanilla
✨ ½ tsp cinnamon

Mix until just combined and let the batter rest for 10 minutes. Cook until the waffles are deep golden brown.

Churro Coating:
🧈 Brush each hot waffle with melted butter, then coat in:
✨ ½ cup sugar + 1½ tsp cinnamon

I used the amazing chocolate chip cookie recipe from **@BromaBakery** and made a couple of tweaks that were so worth it:
• Swapped in **dark brown sugar**
• Doubled the vanilla (2 tbsp instead of 1)
• Used **dark chocolate** instead of semisweet
• Folded in **red, white & blue M&M's**

Brown butter + dark brown sugar is the dream combination. 🤍

Brown Sugar Shaken Espresso ☕️🤎

This one tastes like the kind of coffee you order once...and then compare every other latte to.

Recipe:
• 2 shots espresso (or your favorite strong coffee)
• 1 tbsp dark brown sugar
• ½ tbsp sweetened condensed milk
• Dash of vanilla bean paste
• Dash of cinnamon
• Dash of Molina vanilla
• Ice
• 4–5 oz whole milk (or milk of choice)

Directions:
Add the espresso, brown sugar, sweetened condensed milk, vanilla bean paste, cinnamon, and Molina vanilla to a shaker with ice. Shake vigorously for 20–30 seconds until chilled and frothy.

Fill a glass with fresh ice, pour in the shaken espresso, then top with whole milk (or your favorite milk). Stir gently and enjoy.
