My favorite way to make salsa at home! It’s hard to beat this!

Ingredients:
- 28oz can whole peeled tomatoes, undrained
- 1/2 red or white onion, roughly chopped
- 1 handful cilantro leaves, roughly chopped
- 2 cloves garlic, roughly chopped
- 1 jalapeno, seeded and roughly chopped (leave in seeds for a spicier salsa)
- 1 teaspoon salt
- Juice of 1/2 - 1 whole lime
- 1 teaspoon sugar*

Directions:
1. Add ingredients — whole tomatoes through salt — to a food processor. Add the juice of half a lime, plus the sugar if your canned tomatoes do not contain sugar (if sugar is listed as an ingredient on your canned tomatoes, omit the sugar.)
2. Pulse ingredients until desired consistency is reached then taste and add more lime juice and/or salt if necessary. Refrigerate overnight for best results then serve.

A new recipe for us to switch up our taco Tuesdays! Everyone loved it, but I’m not sure if I’ll make it again or not 🙃

Ingredients:
- 4 tbsp unsalted butter
- 1/4 cup all purpose flour
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1 1/2 cups reduced sodium chicken broth
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup prepared mild salsa
- 2 tbsp extra virgin olive oil
- 1 cup onions, finely chopped
- 1 tbsp minced garlic
- 1 lb lean ground beef
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 10 oz Rotel tomatoes, mild
- 1 tbsp ground cumin
- 1 tbsp fresh lime juice
- 3/4 lb small pasta of choice
- 2 cups shredded cheddar cheese

Instructions:
1. Preheat oven to 350 degrees F and lightly spray a 9x13 inch baking dish with cooking spray.
2. In a medium saucepan over medium heat, melt the butter. Whisk in flour, salt, and pepper for about 30 seconds until bubbly. Slowly whisk in chicken broth until smooth.
3. Increase heat to high while whisking until thickened, about 3-5 minutes. Stir in cheese and salsa, turn off heat and set aside.
4. In a medium skillet over medium heat, add olive oil and sauté onions until softened, about 5 minutes. Add garlic and cook for an additional minute.
5. Add ground beef, salt, and pepper, cooking until browned. Drain fat if necessary. Add tomatoes, cumin, and lime juice, stir to combine.
6. Cook pasta according to package directions, drain and run under cold water.
7. Transfer beef, noodles, and queso to a large pot or dutch oven over medium low heat. Taste and season with additional salt and pepper to your liking.
8. Transfer to prepared baking dish and top with shredded cheese. Bake for 25-30 minutes until cheese is melted. Serve warm.

I’ve made this twice since I originally made this apple dip. This is one from my childhood that we all loved! I made it the other day, and needless to say the kids devoured it! It’s the simplest, and I could eat it by the spoonful!

Ingredients:
1 8oz block of cream cheese
3/4 cup brown sugar
1/4 cup sugar
1 tsp vanilla
Your favorite apples

Instructions
Throw all ingredients into a bowl (except apples) and mix with a hand mixer until smooth. Enjoy right away or put in the refrigerator. Cut up apples and dip them in!

I was asked to bring this to thanksgiving, I don’t think I have made this since the last time I was requested to bring it 🙃 The kids love it, but we have moved onto just loving plain Mac and cheese that I make.

I made a double batch in this, but here is the recipe.

Ingredients:
1 cup elbow noodles
1 can corn, drained
1 can creamed corn
1 stick of butter
8oz velveeta cheese diced up

Instructions:
Cook pasta halfway, add to crockpot. Add all of the corn, butter, and cheese to it. Mix it up well. Cook on high for 2 hours and stir occasionally.

This was a hit for our whole family! A quick and easy one too!

Ingredients:
- 1.5 lbs large shrimp, peeled and deveined (tails removed)
- 4 tbsp butter, melted (unsalted preferred)
- 6 cloves fresh garlic, minced (finely chopped)
- 3/4 cup Parmesan cheese, grated (freshly grated best)
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp black pepper (adjust to taste)
- 1/2 tsp paprika (adjust to taste)
- 2 tbsp fresh parsley, chopped
- 1 lemon, cut into wedges

Instructions:
1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
2. In a large bowl, combine shrimp, melted butter, garlic, salt, black pepper, and paprika. Coat the shrimp evenly for the best flavor.
3. Spread the shrimp in a single layer on the prepared baking sheet and sprinkle with parmesan cheese. Ensure not to overcrowd the pan.
4. Bake in the preheated oven for 8-10 minutes until the shrimp are pink and the cheese is golden. Watch closely to prevent overcooking.

Caprese Salad

Ingredients:
For the marinade:
- 1 tbsp dried basil (or 3 tbsp fresh basil, chopped)
- 1 tbsp dried oregano
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar

- Pinch of pepper

For the salad:

- ½ large red onion (finely chopped)
- 1½ cups cherry tomatoes (quartered)
- 8 oz fresh mozzarella (cherry-sized balls, halved, or torn into small pieces)
- 1 cucumber (peeled, scored, and diced into 1/2-inch pieces)

Steps:

1. **Prepare the Marinade**: In a small bowl, mix together 2 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 1 tablespoon of dried oregano, 1 tablespoon of dried basil (or fresh basil), and a pinch of salt and pepper. Stir until well combined and set aside.

2. **Prepare the Vegetables**: Peel a washed cucumber, use a fork to scrape the skin to create a textured surface, then slice thinly and dice into small pieces. Place the diced cucumber in a medium-sized bowl.

3. **Add the Tomatoes and Onion**: Quarter the washed cherry tomatoes and add them to the bowl with the diced cucumbers. Thinly slice and dice a red onion, then add it to the bowl with the cucumbers and tomatoes.

When I had planned to tator tot casserole and didn’t have tator tots 🤦🏻‍♀️ I scrounged the pantry and made something quick. The kids actually enjoyed it and it wasn’t too bad. Next time I would make it with beef broth, but I also didn’t have that on hand.

Ingredients:
1 lb ground beef, browned
4 cloves of garlic, minced
2 tablespoons butter
1 tsp Italian seasoning
2 cans of chicken broth
1/2 pound noodles
Grated Parmesan cheese

Instructions:
Brown the beef, once browned add butter and garlic, add seasoning and chicken broth. Let simmer then add noodles and cover and cook until done. Then add cheese and mix until combined.

The kids loved these, they weren’t too bad something different!

Ingredients:
- 6 6-inch flour tortillas (or corn tortillas, warmed)
- 1 pound ground beef
- ½ cup onion, chopped
- 1-2 Tablespoons taco seasoning
- Salt and pepper, to taste
- ¼ cup salsa
- ½ cup shredded cheddar cheese

Instructions:
1. Preheat oven to 400°F and line a baking sheet with foil or parchment paper.
2. In a medium-sized skillet, brown 1 pound ground beef and ½ cup chopped onion over medium-high heat. Season with salt and pepper.
3. Drain fat from beef and add 1-2 Tablespoons taco seasoning and ¼ cup salsa. Season to taste.
4. Spray or brush olive oil on both sides of the tortillas and place on prepared baking sheet.
5. Put ¼ cup taco meat and 1 Tablespoon cheese on each tortilla. Fold tortillas in half.
6. Bake tacos for 10 minutes. Flip with a spatula and bake another 5-10 minutes, or until crispy. You can also add cheese to the top after flipping.
7. Serve with pico de gallo, guacamole, or salsa for dipping or spreading on top.

I made snicker apple salad for thanksgiving, I haven’t made it in a long time!

Little tip…the more snickers you add the better it is 😉

Ingredients
1 (8oz) cool whip
4 Granny Smith apples peeled and diced or just diced up
4 snicker candy bars, chunked in small pieces
1 small box instant French vanilla pudding
1 cup milk

Instructions
Mix together pudding and milk and then add the rest of the ingredients, adding apples right before serving. You can soak apples in cold water to prevent browning once diced.
