Tell me you’re a mom in your 30’s without telling me you’re a mom in your 30’s… I’ll go first.

Seriously though… I’m obsessed!

Quick breakfasts, easy snacks, meal prep?! A busy mom’s best friend, not to mention a very pregnant mom trying to grow a stash of ready to go meals in the freezer!

Belgian Waffle Recipe
4 cups flour
6 tsp baking powder
1.5 tsp salt
4 tbsp sugar
6 eggs, separated
3.5 cups milk
1 cup vegetable oil
2 tsp vanilla extract

1. Sift flour with baking powder, salt, and sugar 3 times (I alternated mixing bowls)
2. Beat egg yolks until frothy. Stir in milk, oil and vanilla extract.
3. Pour into flour mixture, beat until smooth.
4. Beat egg whites until stiff peaks form, fold into batter.
5. Follow waffle iron instructions for cooking (I used shade level 2 on the Ninja waffle iron)

To freeze for postpartum meal prep:
• Let waffles cool completely on a wire rack.
• Place on baking sheet lined with parchment paper and place in freezer for 1-2 hours until frozen solid
• Transfer to airtight container with parchment paper separating them

Good for up to 3 months in the freezer! 🫶🏻🧇

Never again will I go to a restaurant without number 4!

1 - Small books (specifically a sensory or touch and feel book for our 1 year old)

2 - Monster trucks for our 4 year old, which already come with us in the car everywhere we go (small cars or small machines work great too)

3 - Water bottles for the kids
It never fails, we sit down and my son says he’s thirsty… That or the restaurant doesn’t have straws or kid-friendly cups that our 1 year old can use)

4 - STROLLER FAN!!!
The real game changer of the list. I can finally eat my own meal while it’s hot and not trying to cool my kids’ food down (plus it’s way faster so minimal complaints about being hungry and their food being too hot)

Haven’t changed a thing in more than 10 years 🤤

Other than maybe the type of ham we use (bone-in, boneless, spiral etc). Depends what is available when we want to make one.

Before preparing the glaze, prepare your ham for the slow cooker by scoring the ham if needed (slicing into the surface in a diamond pattern using a sharp knife - not too deep, maybe 1/4 inch or so).

This allows the glaze to penetrate the meat 🤤

Glaze for Ham

1/2 cup brown sugar
1/2 cup honey
2 tbsp Dijon mustard
1/4 tsp ground cloves
3 cloves garlic, minced
1/4 cup water

1. Add all ingredients to small saucepan
2. Heat over medium heat, stirring constantly until sugar is dissolved and honey is melted (mixture will be steaming and not quite boiling)
3. Pour over ham in slow cooker, pulling apart the scoring (or slices if using a spiral cut ham) to ensure the glaze gets right in the meat
4. Cook on low for 3-4 hours (or high for 2-3 hours).
5. Optional, depending on your oven situation (but extra delicious when you do it): Preheat broiler and transfer your ham to an oven-safe dish. Pour remaining glaze from crockpot to a saucepan and heat for 5 minutes or so until thickened and starting to bubble. Brush onto ham and broil for 4-5 minutes, removing every minute or so to baste with additional glaze.

It’s one of these easiest things you’ll make using your stand mixer 🤤

Seriously though… 5 ingredients is all it takes. And a bit of waiting, which is totally worth it!

Simple Homemade Vanilla Ice Cream (using KitchenAid Ice Cream Maker attachment) 🍨
(EGG FREE RECIPE)

2 cups Whipping Cream (or heavy cream depending where you are)
2 cups Whole Milk
1/2 tbsp Pure Vanilla Extract
1 Cup Granulated Sugar
1/4 tsp Salt

1. Place mixer bowl in freezer AT LEAST 15 hours before starting.
2. Mix listed ingredients together in a glass bowl until sugar and salt dissolves.
3. Cover and refrigerate for 2 hours.
4. Set up stand mixer with frozen ice cream mixing bowl and turn to “stir” before pouring ice cream mixture to bowl (see KitchenAid instructions for details).
5. Churn for 20-30 minutes
6. Put ice cream in a separate container and freeze for 4 hours before enjoying! (Make sure you sneak a sample or 2 of the soft serve consistency ice cream while you’re at it!)

Save this crockpot recipe for your next football party!! 🏈 (or as part of your slow cooker meal rotation)

Making this in the crockpot is a life saver during the week!! Any recipe that my 4 year old approves of is a win too (even my 1 year old is into eating this chili)!

Ingredients
• a couple tsp Olive or Avocado Oil (or your choice of cooking oil)
• 1 yellow onion
• 4 garlic cloves
• 1 lb ground turkey (or chicken)
• 2 tbsp chili powder
• 2 tsp cumin
• 1 tsp oregano
• 1/2 tsp salt
• 1 red bell pepper
• 1 can diced tomatoes (28 oz)
• 2 cans red kidney beans (15 oz each)
• 1 can peaches and cream corn (15oz)
• 1/2 cup chicken broth

Directions
1. Heat oil over medium heat in frying pan then add onion. Cook for a couple minutes until translucent, then add garlic and cook for about 30 seconds until fragrant.

2. Add ground turkey and cook all the way through.

3. Add spice mixture (chili powder, cumin, oregano, salt - could also add 1/8 tsp of cayenne if you like an extra bit of heat).

4. Pour cooked turkey mixture into slow cooker.

5. Add red pepper, diced tomatoes rinsed kidney beans, rinsed corn and chicken broth.

6. Cook in slow cooker on low for 6-7 hours or high for 3-4 hours.

I love dipping tortilla chips in this chili.

Number 3 is the most important…

1. Expert Mode: Double tap the brew button to concentrate coffee into a smaller serving (coffee size capsule to double espresso, espresso capsule to ristretto etc). Super useful tip if you make more lattes than any other drink!

2. Did your Nespresso machine come without the Aeroccino3 milk frother? Honestly… You could start with a handheld frother. I do love that the Aeroccino3 heats the milk and froth (or keeps it cold for your iced lattes), so that is what I will typically use.

3. CLEAN YOUR NESPRESSO! 🫧 Use your Nespresso app to begin the process or triple tap the brew button to run a rinse cycle. The taste and quality of your espresso drinks will improve SIGNIFICANTLY when you clean your machine regularly.
I try to clean/rinse weekly, descale every 3 months depending on how often you use it (the more often you use it, the more often you’ll want to descale)
3a - Your machine will also let you know when it’s due for a descale! The brew button will flash orange when you turn it on.

I started using these ingredients in my chocolate chip cookies and have never looked back 🍪

1. Cinnamon (1-2 tsp) - adds a layer of flavour and makes for an extra cozy smelling cookie. I distinctly remember coming across a recipe when I got into baking in high school and have used cinnamon in my cookies since then!

2. Instant Espresso Powder (1-2 tsp) - Enhances chocolate flavour without adding a coffee or espresso taste (if you want the espresso flavour addition, you can add 1 tbsp). I started using this ingredient after learning that adding coffee or espresso powder to chocolate cake helps to enhance the flavour and thought “why not try it in cookies?”

HOW TO CLEAN YOUR NESPRESSO VERTUO POP+

1. Fill the water tank

2. Empty your used capsules container (and ensure there’s no capsule loaded)

3. Place a large container under the spout (I use a 4L glass measuring cup)

4. Press the brew button THREE times within 2 seconds

5. Let the cycle run until finished (repeat again if you haven’t done it in awhile and continue WEEKLY for the best tasting espresso

Fireball Whiskey Cupcakes (makes 20 cupcakes) 🔥🧁

(Note: these aren’t minor or pregnancy friendly - the cupcakes don’t bake long enough to bake out the alcohol and there is alcohol in the buttercream)

Cupcake Ingredients:
1 box Vanilla cake mix
¾ cup milk
¼ cup Fireball
½ cup unsalted butter (melted and cooled slightly)
4 eggs
1 tsp vanilla extract
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp ground clove
Pinch of cayenne pepper

Buttercream Ingredients:
1 cup unsalted butter
4 ¼ cup powdered sugar
½ tsp cinnamon
Pinch of cayenne
¼ tsp salt
2 tsp pure vanilla extract
2 tbsp milk or heavy cream
¼ cup Fireball
Red food coloring if you want the color shown ⬆️ (pre-coloring, this buttercream is white with flecks of cinnamon)

Directions to make Fireball Cupcakes:

1. Preheat oven to 350° F.

2. Line a cupcake pan with cupcake liners and set aside.

3. In a large bowl, mix vanilla cake mix with cinnamon, nutmeg, ground clove and cayenne then mix well.

5. In another bowl (a stand mixer or use a hand mixer) beat together cooled melted butter, eggs, milk, vanilla and Fireball.

6. Slowly pour the wet ingredients into the dry ingredients mixing until everything is well incorporated.

7. Divide the batter between the cupcake liners.

8. Bake the Fireball Cupcakes for 18-21 minutes

9. Remove from oven and cool cupcakes in tray for 10 minutes before removing to cooling rack to cool completely before decorating.

Directions for Fireball Buttercream

1. In stand mixer bowl fitted with flat paddle attachment, beat butter for 5-7 minutes until fluffy and lighter in color.

2. Mix in vanilla and salt.

3. In a separate bowl, sift together your powdered sugar, cinnamon, and cayenne. Add this to the butter mixture and begin beating to combine.

4. Add milk and Fireball once powdered sugar is almost incorporated and mix until combined.

5. Add red food coloring until desired shade is reached.

6. Decorate the fireball cupcakes however you like - I used Wilton 1M tip and piped a simple rosette

“Can I take the rest home?” - my friend when I shared these cookies with them 🍪

“These are my new favourite cookies you’ve made” - my husband, taste testing as soon as they came out of the oven

So, I made a second batch of the easiest chocolate chip cookies and filmed it for you!!!

My only regret is not breaking one in half for you sooner when filming this… They are so ooey gooey and delicious fresh from the oven, but still so soft and mouth-watering delicious after cooling for a bit 🤤

Chocolate Chip Cookies
1 1/4 cups all purpose flour, spooned and leveled
1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1/2 tsp fine espresso powder
1 tsp cinnamon
1/2 cup unsalted butter, melted and cooled
1/2 cup light brown sugar, packed
1/3 cup granulated sugar
2 tsp pure vanilla extract
1 large egg
1 1/2 cups semisweet chocolate chips

Directions

1. Preheat the oven to 350F and line a large baking sheet with parchment paper.

2. In a medium sized bowl, whisk together the flour, baking soda, baking powder, salt, espresso powder and cinnamon. Set aside.

3. In a large mixing bowl, add the melted and cooled butter, brown sugar, and sugar. Whisk to combine into a paste.

4. Whisk in the egg and vanilla until smooth.

5. Pour in the dry ingredients and use a rubber spatula to fold to combine. Leave a few streaks of flour and pour in the chocolate chips. Continue to fold the dough until the chocolate chips are dispersed and the flour is completely blended in. Take care not to over mix.

6. Scoop 6 cookies onto the baking sheet and bake for 10-12 minutes (10 for a more gooey cookie, 12 more a more well done cookie).

7. Transfer to a cooling rack and enjoy some while still warm
