Creamy, cozy, and packed with flavor… this Creamy Chicken & Chorizo Soup is one of those “make it once and crave it forever” recipes. It’s rich, silky, hearty, and that chorizo adds the perfect little kick. Save this for busy weeknights because it disappears fast.

INGREDIENTS
• Shredded rotisserie chicken (or leftover chicken)
• Sliced chorizo
• Wide egg noodles
• Chicken broth
• Heavy cream
• Butter
• Flour
• Chopped onion
• Minced garlic
• Celery 
• Carrots 
• Salt and pepper
• Italian seasoning
• 2 packages Sazon seasoning from @goyafoods 
• Parsley or green onions for topping

STEP BY STEP
	1.	Heat olive oil in a pot, add sliced chorizo, and cook until lightly crisped. Remove and set aside.
	2.	In the same pot, melt butter and sauté onion (plus celery and carrots if using) until soft, then add garlic.
	3.	Sprinkle in flour and stir to form a roux. Slowly whisk in chicken broth until smooth and creamy.
	4.	Add shredded chicken, Italian seasoning, salt, and pepper. Bring to a gentle simmer.
	5.	Stir in egg noodles and cook until tender.
	6.	Pour in heavy cream, add the chorizo back in, and let everything come together until silky and thick.
	7.	Top with parsley or green onions and serve hot.

✨ Ingredients:

1 bell pepper, chopped
1 small onion, chopped
2 cloves garlic, minced
1 tbsp avocado oil
2 chicken breasts (cubed) or 2 cups shredded rotisserie chicken
1tbsp The One Pot Momma’s Creole Trinity & Herb Blend
1 large can Blue Runner’s Creole Mirepoix White Beans
4 cups chicken bone broth
2 tbsp cream cheese
1 packet Carroll Shelby’s White Chicken Chili Mix

🔥 To make:

 Sauté bell pepper, onion, and garlic in avocado oil. Add chicken and season with Creole Trinity & Herb Blend. Stir in white beans, bone broth, cream cheese, and the white chicken chili mix. Let it simmer about 30 minutes—and you’ve got a major award in a bowl.

Sometimes spaghetti just feels… predictable. You twirl it, you eat it, and it’s good, but it’s the same story every time. The other night I wanted pasta night to feel a little different, so I swapped spaghetti for rigatoni and rolled tiny meatballs instead of the usual big ones. Something about those bite-sized meatballs tucked into the ridges of rigatoni just hit differently. Cozy, comforting, but fresh enough to make it feel like a whole new dish. 🍝✨

Meatball Rigatoni Recipe
	•	1 lb ground beef (or mix beef + pork)
	•	1 egg
	•	½ cup breadcrumbs
	•	½ cup grated parmesan
	•	3 cloves garlic, minced
	•	2 tsp Italian seasoning
	•	Salt + pepper
	•	1 jar marinara sauce @jerseyitaliangravy 
	•	1 lb rigatoni pasta
	•	1 cup mozzarella cheese

How to make it:
	1.	Mix beef, egg, breadcrumbs, parmesan, garlic, Italian seasoning, salt and pepper. Roll into tiny meatballs.
	2.	Brown meatballs in a skillet until golden, then pour in marinara and let them simmer.
	3.	Boil rigatoni until al dente, then toss with sauce + meatballs.
	4.	Transfer to a baking dish, top with mozzarella, and bake at 375°F for 15 minutes until bubbly.

Serve it straight out of the dish with crusty bread.

This Cajun Spicy Fettuccine was a happy accident born from a nearly empty fridge, a thriving garden, and a serious lack of grocery runs 🙃

Our kitchen fridge has been out for TWO weeks (Samsung, please… I’m begging), so we’ve been living out of the garage fridge, and it’s getting real tight in there. With some garden veggies ready to harvest and leftover ingredients holding on for dear life, this spicy, creamy pasta came to life. And wow… it’s definitely going on repeat.

Here’s how it came together:

Sauté 1 lb of sliced andouille sausage in a bit of really good olive oil (like @terradelyssa), then toss in a sliced red onion, poblano pepper, summer squash, mushrooms, and a chopped tomato. Add 3 cloves of minced garlic and cook until everything’s softened and fragrant.

Stir in 1 cup white wine and 1 cup chicken broth (or sub water + bouillon powder), then add 1 lb frozen shrimp straight in and let them simmer until cooked through.

Reduce the heat and pour in ½ cup whole milk (or ¼ cup heavy cream), a generous handful of grated parmesan, and season with Old Bay to taste.
Toss with fresh fettuccine and a little pasta water if needed to bring it all together.

It’s smoky, creamy, just the right amount of spicy, and tastes like you planned it. Even when you absolutely did not. 🫶
