Sometimes spaghetti just feels… predictable. You twirl it, you eat it, and it’s good, but it’s the same story every time. The other night I wanted pasta night to feel a little different, so I swapped spaghetti for rigatoni and rolled tiny meatballs instead of the usual big ones. Something about those bite-sized meatballs tucked into the ridges of rigatoni just hit differently. Cozy, comforting, but fresh enough to make it feel like a whole new dish. 🍝✨ Meatball Rigatoni Recipe • 1 lb ground beef (or mix beef + pork) • 1 egg • ½ cup breadcrumbs • ½ cup grated parmesan • 3 cloves garlic, minced • 2 tsp Italian seasoning • Salt + pepper • 1 jar marinara sauce @jerseyitaliangravy • 1 lb rigatoni pasta • 1 cup mozzarella cheese How to make it: 1. Mix beef, egg, breadcrumbs, parmesan, garlic, Italian seasoning, salt and pepper. Roll into tiny meatballs. 2. Brown meatballs in a skillet until golden, then pour in marinara and let them simmer. 3. Boil rigatoni until al dente, then toss with sauce + meatballs. 4. Transfer to a baking dish, top with mozzarella, and bake at 375°F for 15 minutes until bubbly. Serve it straight out of the dish with crusty bread.
