1 year ago this month I started The Food Dragon private chef business 👩🏻‍🍳🐉 I have no words to express how grateful I am for the support I’ve received from the LBI community and everyone who tunes in to follow my cheffing adventures. Farmers Market Succotash Salad:
— 6/7 ears of corn (jersey corn if you know what you’re doing) boiled, cooled and cut off the cob
— 1 pint cherry tomatoes, halved
— 1lb of green beans, blanched and cut into 1 inch bites
— 1 bunch scallions, thinly sliced
— torn basil
— chives (cilantro or parsley would be great too)

Lemon Vinaigrette Dressing
— 1 lemon, juiced
— 1/2 cup evoo
— salt & pepper to taste
— 1ish tsp honey

Blend dressing together & toss with salad right before serving. Also peaches would be crazy in this, use what you have!!
