Crockpot meals on repeat 🔂 

This chicken has been a staple in my house for years. It’s soooo easy, healthy and the boys love it! Plus it’s soooo versatile. You can eat plain, burrito bowls, quesadillas, burritos, tacos, the possibilities are endless really bc it’s sooo tasty and tender (plus you dump and forget until the smell engulfs your house) 

Recipe:
Pack of chicken breasts (I use 2 packs bc I like having leftovers for meal prep lunches or snacks for the boys after school) 
1 jar of your favorite salsa 
I packet of chicken taco seasoning. I used McCormick but I’ve used others before. Really the simmering in salsa for 6 hours on low is what gives this chicken its flavor 🤤
Dump in crockpot and cook on low for 6hours 
Then shred and let those juices just soak up that shredded chicken 🫶

Tonight’s I’m serving over white rice, with black beans and the fixings but it’s so good you could eat plain!

high protein buffalo chicken dip 🧡

my boys love buffalo chicken dip but I wanted to find a healthier version of it so I felt better about feeding it to them and also I didn’t feel as guilty eating it lol 

The biggest difference is replacing cream cheese & ranch for cottage cheese (blended in the ninja until smooth) 

I’ve been making this same recipe for months now and the boys loveeee it! They even take the leftovers in their lunches during the week with the leftovers. 
Makes great lunches for everybody during the week and it heats up well for after school snacks 🫶

Recipie: 
about 2 cups of chicken. I just use a rotisserie chicken cut up 
1.5 c cottage cheese (blended together so it’s smooth in texture)
1/2 c franks buffalo hot sauce
1/2 teaspoon garlic powder 
1/2 teaspoon onion powder 
1/4 teaspoon dill weed
1/4 teaspoon parsley 
1/8 black pepper 
1/2 c shredded cheddar cheese 
Mix together.
Put in baking dish and top with more cheddar cheese. Bake at 350 for about 30 minutes

Lemon blossoms for dessert this week 🍋

These are so easy and so good! 

Recipe:
Yellow cake mix
Lemon pudding mix
4 eggs 
3/4 c vegetable oil 

Glaze:
2 tablespoons lemon zest 
2 c confectionery sugar 
Juice of 2 lemons 
1 Tablespoon of water (add more if need smoother consistency) 

After cupcakes are done dip them in glaze while still warm and then let sit then devour 🤤

better than sex cake 🤤

I hadn’t made this in years and let me tell you it did not disappoint! I’d never made it for the boys or Brandon before and they all loved it 🤎

It’s soooo easy and a great easy dessert to bring to someone’s house or for the holidays, or just a random winterey January day. 
Idk bout yall but something bout winter makes me wanna bake something 🍰

Recipe:
Devils food cake mix (cook as instructed on box)
When done, use a fork (or even a chopstick or kabob stick) and poke holes all over the top through the cake. 
Pour jar of smuckers caramel sauce over top the cake (filling those holes) 
Pour can of condensed milk on top 
Put cake in the fridge for atleast 2 to 3 hours to let the milk and caramel really set into the cake 
Then add cool whip over the top 
Finish off with crushed heath bar sprinkled over the top 

This cake is so moist and decadent. It gets even better the longer you let it set. I baked this this afternoon and it we couldn’t wait until tomorrow to try and it was already perfection…. But tomorrow it’ll taste even better when the cake really absorbs everything 🫶

This would also make for a great date night dessert or even for a night in on Valentine’s Day! ♥️

healthier Buffalo chicken dip for the win 🏆 

Brady lovessss Buffalo chicken anything and he lovessss this dip. Instead of cream cheese, I used cottage cheese. 

Recipie: 
2 cups rotisserie chicken
1 1/2 cottage cheese (pulsed until smooth for texture) 
1/2 shredded cheese 
1/2 franks buffalo sauce 
1/2 teaspoon garlic powder 
1/2 teaspoon onion powder
1/4 teaspoon dill weed
1/4 teaspoon parsley 
1/8 black pepper 

Mix all together. Put in baking dish and sprinkle with more cheddar cheese 

Bake at 350 for about 20-30 minutes

Iced oatmeal cookies 🤤

Yall these are sooo good. I made the dough a couple days ago and then set it in the fridge & pulled it out and baked tonight then dipped in the frosting. 
I loveeeee oatmeal cookies & this is a homemade recipe for those delicious packaged iced oatmeal cookies. Trust me, this one is sooo much better and worth the work (which I enjoy anyways bc Gunner always helps me so it’s a bonding thing for us) 

Recipie: 
2 cups old fashioned oats (ground finer- I used my ninja)
2 cups all purpose flour 
1 teaspoon baking soda
I teaspoon salt
1 1/2 teaspoon cinnamon 
1/2 teaspoon nutmeg 
1 cup unsalted butter (room temp)
1 cup brown sugar 
1/2 cup granulated sugar
2 large eggs 
1 tablespoon dark molasses (I used grandmas brand)
2 teaspoons pure vanilla extract 

Icing:
1 1/2 cups powdered sugar 
1/4 teaspoon pure vanilla extract 
1.5 - 2 tablespoons milk 
(The more liquid you add, the runnier the icing so if you want a thicker icing, add milk slowly and stir to the consistency you desire) 

•whisk pulsed oats, flour, baking soda, salt, cinnamon, nutmeg, set aside. 
• using a standing mixer, beat the butter, brown sugar, granulated sugar together about 2 minutes. Add eggs, molasses, & vanilla. Beat on high speed until well combined. 
•add the dry ingredients slowly on low until well combined. Cover & chill dough for 45 minutes or a few days. 
• scoop cookie dough onto baking sheet. Bake at 350 for about 12 minutes or so. 
• remove from oven and let cool. 
• make icing ^
• when cookies are cool dip top of cookies into icing and let “dry” on baking sheet.

Dinner time 🤤

Made these super easy and delicious chicken thighs (it’s actually a weight watchers recipie)
The boys raved. Went back for seconds and the thirds….

Recipie:
8 chicken thighs (I got the big pack of 12 bc I’ve got big eaters) 
1/4 c olive oil
3 tablespoons Dijon mustard 
Juice of 2 lemons 
4 cloves of garlic 
3 teaspoons oregano 
2 teaspoons thyme 
1 teaspoon dill 
I teaspoon paprika 
2-3 teaspoons salt
1 teaspoon black pepper 

- mix up the marinade and pour over chicken (in ziploc bag or pan/bowl & cover) marinade 2-6 hours. 
- when ready, back at 350 for about 40 minutes 

I served with basmati rice and sautéed zucchini. The sauce the chicken is cooked in makes for a great topper on the rice (potatoes would also be good)

Breakfast ✨

My literal favorite breakfast that I eat daily and if I don’t have it for breakfast, I’ll make it a snack :) 

Berry bowl but add some cinnamon with strawberry cheesecake Greek yogurt and then a dash more cinnamon with chia seeds sprinkled on top. (Add granola if you desire) 
I’ve also got my youngest son eating this daily to get his nutrients in 🫶

Healthy skin and bodies start within. So before I even think about exercising, the fuel I put into my body (or my sons bodies) is just as important as the movement 💪

easy and cheap lunch idea that’s on the healthier side 🤤

So at the beginning of the week, I’ve been making a double batch of jasmine rice whenever I make it for dinner (typically with my teriyaki salmon or bourbon chicken) and then use it for lunches for myself for the rest of the week. I’m obsessed with cucumbers so I’ll slice those up and put a big scoop of hummus on top with ground black pepper and it’s soooo delicious! (I’ve also added some little tomatoes or left over chicken breast, but my favorite is just this simple combo) 
So easy and quick to make plus you don’t feel like you’ve eaten too heavy 🫶

Plus these Stacy’s Parmesan garlic and herb pita chips are littyyyyyyy with some hummus!

Teriyaki Salmon for supper 🤤

Combined it with some white rice and broccoli and it was soooo good yall!!! Plus super easy. Will 100000% be making again 🫶

Recipie: 
4 salmon filets 
Sesame seeds for garnish 
Sauce:
1/3 c low sodium soy sauce 
1/4 c orange juice (fresh) 
3 tablespoon water 
2 tablespoons honey (I added around another tablespoon or so to make a little sweeter & the boys lovedddd it)
2 garlic cloves minced 
1 tablespoon ginger 
1/2 lemon juiced
1 tablespoon cornstarch
1 teaspoon red chili flakes 

instructions: 
make sauce, pat salmon filets down with paper towel and salt and pepper them. Place in a low baking dish, pour sauce over top and bake at 370 for about 20
Minutes. 
Half way through, I like to spoon the sauce over the top again to really coat the salmon. 
when it’s done, spoon the sauce in the baking dish over the top again, and sprinkle with sesame seeds. Ta-da! 

This is so good the boys were begging for more, like I’m going to make 7 salmon filets next time bc they enhaled it! Delicious with basmati rice 🤤
