Dinner in the crockpot is always a win, but this Cajun chicken and sausage pasta might be one of my favorite easy dinners lately. It’s delicious and simple enough for a weeknight and the kids loved it. Save this one for later because it makes a big batch and it’s so good the next day too. Ingredients Chicken & Sausage • 2 lbs boneless skinless chicken breasts • 8–12 oz andouille or smoked sausage Veggies • 1.5-2 cups bell peppers, diced • 1 onion, diced • 4–6 cloves garlic, minced • 1 (10 oz) can Rotel, undrained Base • 1 cup chicken broth Seasoning (I eyeballed, but here are measurements you can follow if you don’t feel comfortable) • 2 tsp Cajun seasoning • 1–1½ tsp Tony’s Creole seasoning • 1 tsp smoked paprika • 1 tsp garlic powder • 1 tsp onion powder • ½ tsp black pepper • ½ tsp white pepper • ½ tsp dried thyme • ½ tsp dried oregano • Cayenne to taste (optional) • 1–2 tbsp olive oil Finish • 1 cup heavy cream • 8 oz cream cheese, cubed • 12 oz farfalle pasta, cooked al dente • 1–1½ cups freshly grated parmesan • 2–3 cups fresh baby spinach Add Veggies, Sausage, broth, chicken, olive oil, and seasoning in the crockpot. Cook on hight for 2.5 hours or low for 4-5 hours. Shred the chicken, stir in heavy cream and cream cheese. Cook on low for 20 mins. Then add cooked pasta, spinach and parmesan cheese until the sauce thickens and everything is creamy (Approx 10 mins) You can find some of my kitchen favorites linked LTKHome LTKKids LTKmomlife
